E766F8B9-148F-4EA4-AD11-76ECDD997EDF.JPGOne of our favorite summer meals right now! It’s always a hit when we make it for a crowd. We’ve easily made it at the lake 5-6 times and people are always in love. Thought I’d share it with you in case you need some dinner inspiration this week! It has all the delicious flavors and all things Greek, which is one of my favorite food groups. If you try it out, let me know and tag me on Instagram, I love to know what you guys think 🙂 Onto the recipe!

Greek Chicken Skewers:

-3 chicken breasts, cut into cubes

-1 red bell pepper, cut into squares

-1 yellow pepper, cut into squares

-2 small zucchinis, chopped in coins

-1 yellow onion, cut into squares

-3-4 cloves of garlic, chopped

-juice of 1 fresh lemon

-3-4 tbsp olive oil

-4 tsp dried oregano

-2 tsp dried parsley

-1 tsp paprika

-sea salt, to taste

-pepper, to taste

-pack of wooden skewers

-for serving/ dipping: hummus & tzatziki

To start chop all vegetables around the same size (so about the size of the zucchini coins so they’re easy to skewer. Mix all veggies in a bowl with about 1-2 tbsp olive oil, 2 tsp garlic powder, 2 tsp oregano, 1-2 tsp sea salt  & 1 tsp pepper. Set aside.

For the chicken, pat dry the chicken to dry it out with paper towels. Then chop chicken into cubes. Throw it all in a bowl with 1-2 tbsp olive oil, lemon juice, chopped garlic, 2 tsp dried parsley, 2 tsp dried oregano, 1 tsp paprika, 1-2 tsp sea salt, 1 tsp pepper. Let marinate in the bowl for at least 30 minutes, but preferably overnight.

Before skewering, make sure to soak your wooden skewers in water for about 30 minutes to an hour so they don’t burn on the grill. Once everything is prepared, start skewering! We usually do a piece of chicken, a few veggies, chicken, veggies, repeat. Then grill until charred and chicken is cooked through (internal temperature of 165 degrees). Best dipped in hummus and tzatziki!

Herbed Rice:

-1/2 cup white jasmine rice

-1/2 cup orzo

-2 cups water

-2 tbsp butter

-2 tsp dried parsley

-1 tsp garlic powder

-1 tsp sea salt

-1/2 tsp black pepper

-1/4 tsp onion powder

Melt the butter in a small or medium pot. Add in the orzo and saute on low to medium heat for 1-2 minutes. Add in rice. Add in garlic powder and onion powder and stir for a few minutes. It should start smelling delicious. Add in water, dried parsley, sea salt, and black pepper. Bring to a boil. Once boiling, cover and simmer for 20 minutes. When done, remove from heat and set aside for 5-10 minutes without taking off the top. Then fluff with a fork and enjoy!

Green Salad:

-green leaf lettuce or romaine

-greek dressing

*usually add cucumbers & feta to make it a greek salad!

Hope you enjoy!!!!
