Chocolate Cherry Baked Oatmeal

Chocolate cherry baked oatmeal just in time for cherry season! Loaded with sweet cherries and rich dark chocolate, which are the perfect pair. Ben & Jerry's Cherry Garcia ice cream was one of my favorite flavors growing up, and this combination will always remind of that. So here's my baked oatmeal version of that flavor! It's just too good, you'll be wanting to make this one again and again!

  • 9x9 baking pan OR regular muffin tin


  • 2 eggs
  • ½ cup plain greek yogurt
  • ½ cup maple syrup
  • cups cashew milk or any milk
  • 1 tsp vanilla extract or vanilla extract
  • 3 cups quick oats
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 1 cup fresh or frozen cherries pitted and chopped
  • ½ cup dark chocolate chopped


  • Preheat oven to 350 degrees.
  • In a large mixing bowl, whisk the eggs together. Add in maple syrup, yogurt, cashew milk, & vanilla extract.
  • Once combined, pour in the oats, baking powder & sea salt. Mix until well combined.
  • Add in the fresh pitted & chopped cherries! Or you can use frozen here. You can reserve some for topping, add additional for topping, or just mix everything in!
  • Next, add in the chopped dark chocolate or whatever chocolate you're using!
  • Pour into 12 greased regular muffin tins OR a greased 9x9 baking pan.
  • Bake for about 30-35 minutes until center is set but still soft. For muffins, bake for about 20-25 minutes.
  • I love serving mine with yogurt, more cherries, and peanut butter! Enjoy!


For storing: Once cooled completely, store in the fridge for up to a week. Enjoy from the fridge or warmed up!
For freezing: Individually wrap in plastic wrap and then store in a freezer bag. To thaw, place in the fridge overnight and heat or eat cold in the morning!
