Cacio E Pepe Shrimp Pasta

Cacio e pepe shrimp pasta is an easy date night dinner idea! Or honestly perfect for any night of the week. It feels fancy, but really it's so simple! Full of flavor and lots of deliciousness. Loaded with all the best things: pasta, shrimp, butter, olive oil, garlic, parmesan, and parsley. It's quick to make and not too many ingredients! Enjoy with a glass of wine or your favorite drink and someone you love!

Ingredients

  • 1 lb fresh shrimp peeled & deveined
  • 8 oz spaghetti linguine or pasta of choice
  • 1 shallot diced
  • 4-5 garlic cloves chopped
  • 2-3 tbsp olive oil
  • 2 tbsp butter
  • cup pasta water
  • ¼-⅓ cup parmesan
  • 2 tbsp fresh parsley chopped
  • sea salt & pepper to taste
  • red pepper flakes to taste

Instructions

  • Pat dry shrimp with paper towels to get off most of the moisture. Then season generously with salt and pepper. Set aside.
  • Meanwhile, boil water and sea salt in a medium pot for the pasta. Add in pasta when it's ready and cook until al dente.
  • Heat a large pan, then add in olive oil and chopped garlic and saute until fragrant.
  • Add in the shrimp and cook on each side for about 3-5 minutes until shrimp is cooked through. Sprinkle with red pepper flakes. Remove from pan and set aside.
  • Add in butter to the pan and saute shallot for about 2-3 minutes until softened. Add the shrimp back in and pour in the drained pasta on top. Pour in about ⅓-½ cup pasta water. Sprinkle parmesan directly onto the pasta because it'll stick better!
  • Season with sea salt and pepper. Mix everything together well! Then sprinkle with chopped parsley!
  • Enjoy at the table with a glass of wine and bring over the fresh parmesan for sprinkling on top if desired!

Notes

For Storing: Store in an airtight container in the fridge for up to 3 days.
