Ice cream cake is one of those desserts that never fails! They're honestly easier to make than cake, and is usually a hit. Growing up, I only ever did ice cream cake at my birthday, because I'm not a big cake fan. Now my oldest son, T, requested one for his 4th birthday and my mama heart is so happy! It's one of my favorite desserts too, but I never thought to make my own until now. It'll probably become a new family tradition since ice cream is hands down T's favorite dessert!
Blend the oreos in a food processor or blender. You can also put them in a plastic bag & smash them until they’re a fine consistency.
Melt the butter on the stovetop or in the microwave.
Transfer the oreo crumbs to a bowl with the butter and mix until they’re well combined.
Press the mixture into a 9in springform pan firmly! Freeze crust for 15 minutes.
Meanwhile, while the crust is freezing, pull out your first ice cream of choice. I did chocolate chip cookie dough first and let it melt. It’s best if you pour it into a bowl and let it melt in there so it’s easy to mix up and spread. It also helps everything easily distribute.
*Note: I did 48oz of ice cream in each layer, but it makes THICK layers! So if you want them thinner, you could use about ½-⅔ of the pint! You can't really mess up and there are no exact measurements!*
Once the crust is frozen, pour on your first ice cream mixture. Spread evenly and freeze for 30 minutes.
While that’s freezing, pull out your second ice cream, I did chocolate! Let that melt, again it’s best to throw it into a bowl so everything melts evenly but no big deal if not, it just makes it easier!
Once the first layer is frozen, pour on the second layer of melted ice cream. Spread to cover the top.
In a plastic bag, add 5-6 oreos. Smash with a spoon to make a nice crumble topping. Top the ice cream with the crushed oreos all over. Add sprinkles if you prefer or in addition!
Cover the cake with aluminum foil and freeze for 12 hours. You can even freeze it for a few days before serving which is so convenient, because it's easy to prep it ahead!

For Storing: Keep leftovers in the freezer for 1-2 months!
