Best Pancake Mix Donuts

If you love pancakes but want to switch things up, these pancake mix donuts are the perfect fun twist! They’re light, fluffy, and incredibly easy to make. Plus, they’re baked instead of fried, making them a healthier alternative to traditional donuts. It's also a great way to change up pancakes for your kids. My boys always think these are such a special treat!

Ingredients

  • 2 cups pancake mix Kodiak Cakes or my homemade mix (below)
  • 1 cup whole milk or milk of choice
  • 2 eggs
  • ¼ cup maple syrup
  • ¼ tsp sea salt

Toppings: (whatever you like)

  • sprinkles
  • mini chocolate chips
  • blueberries fresh or frozen

Instructions

  • Preheat your oven to 375F degrees.
  • Mix all the ingredients together until combined.
  • Spray a donut pan with avocado oil spray or butter. Pour in the mixture. I like to pour the mixture into a ziploc bag, and then cut the bottom corner to make it easy to pour the mix out.
  • Pour the mixture into the donut pan.
  • Top with sprinkles and chocolate chips or whatever toppings you prefer!
  • Bake for 12-15 min until cooked through! Mine made 12 pancake donuts.

Notes

Homemade Pancake Mix:
Dry Ingredients:
-6 cups all-purpose flour
-1/4 cup cane sugar
-1/4 cup baking powder
-2 tsp baking soda
-1 tsp sea salt
Directions:
1. In a large bowl, add in 2 eggs, 1 1/2 cups of milk, and 1 tsp vanilla extract. Optional: Greek yogurt or collagen.
2. Next add in 2 cups of the dry pancake mixture. I like to shake the jar up a little before adding to make sure it’s nice and incorporated.
3. If the mix seems too thin, add a little more mix. If it feels too thick, add a bit more milk. The baking soda/ powder will make it bubble up a little. Just mix it again! Enjoy!
Note for Pancake Donuts: When making the pancake donuts, just mix up the pancake mix mixture and use 2 cups in the recipe above!
