Chicken Sausage and Orzo Pasta

Equipment

  • 12in cast iron skillet

Ingredients

  • 2 tbsp avocado oil or butter
  • 4-5 chicken sausages sliced
  • ½ yellow onion diced
  • cup orzo
  • 2 cups chicken broth
  • ¼ cup heavy cream
  • cups fresh spinach
  • cup parmesan cheese shredded
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • fresh thyme optional

Instructions

  • Heat a large skillet and add avocado oil. Then add yellow onion and cook for 1-2 minutes. Next, add sliced sausage & cook together for 4-5 minutes.
  • Then add in the orzo and toast for 2-3 minutes.
  • Pour in the chicken broth and seasonings. Bring to a boil and then add the heavy cream. Reduce heat to simmer, cover and cook for 10-12 minutes.
  • Stir occasionally and add parmesan cheese and fresh spinach. Let melt & wilt down and then serve hot. Enjoy! 

Notes

For Storing: Store in airtight container in the refrigerator for 3-4 days.
