Easy Hearty Brunswick Stew

This easy hearty Brunswick stew is a classic Southern American dish, known for its delicious and comforting flavors. This stew typically combines meats like chicken or pork with vegetables in a savory tomato-based broth, making it a perfect choice for chilly evenings or family gatherings. We used pork only and its safe to say we loved the recipe!

Ingredients

  • 3-4 lbs pork butt or shoulder cooked (our recipe here)
  • 2 tbsp avocado oil
  • 1 yellow onion diced
  • 3-4 cloves of garlic diced
  • 1 can diced fire roasted tomatoes
  • 2 tbsp tomato paste
  • 12 oz frozen lima beans
  • 1 cup frozen corn
  • 2 cups chicken bone broth (or more for desired consistency)
  • 1 tbsp hot sauce
  • 1 tbsp Worcestershire sauce
  • ½ cup barbecue sauce
  • 1 tsp sea salt
  • 1 tsp black pepper

Instructions

  • Heat dutch oven on medium high heat and add oil. Cook onions and garlic for 2-3 minutes.
  • Add the cooked pulled pork and mix well for another 1-2 minutes. Next add in the diced tomatoes, tomato paste and chicken broth. Stir together and add in spices and sauces; hot sauce, Worcestershire sauce and barbecue sauce.
  • Bring soup to a boil. Once it comes to boil add frozen corn and lima beans. Cover pot and simmer for 15-20 minutes.
  • Adjust seasoning with more salt and pepper if needed. Serve hot, optionally garnished with fresh parsley or green onions.

Notes

For Storing: Store in airtight container for 3-4 days.
