2cupsall purpose flouror einkorn flour (which I prefer)
2tbspcoconut sugaror cane sugar
3tspbaking powder

Instructions
Preheat the waffle iron according to the manufacturer’s instructions.
In a large bowl, whisk together eggs, melted and cooled coconut oil, 1½ cups milk, and vanilla extract. the flour, sugar, baking powder, and salt.
Then add in the flour, sugar, baking powder, salt, and collagen if using. Whisk until everything is well combined. Ideally here it's great if you can let the batter sit for 30 minutes to develop the flavor or cover it and store it in the fridge for 12-18 hours. If not, you can still go ahead and make the waffles right away!
If you choose to let the batter sit (which I recommend), give the batter a good mix before using. You may have to add a few dashes of milk to get a nice pourable consistency.
Preheat your waffle iron. Lightly grease the waffle iron with oil or butter. Pour batter onto the heated waffle iron (amount depends on your waffle maker but I use about ¼ cup) and cook until golden brown and crisp.
Enjoy warm with butter, syrup, fresh fruit, or your favorite toppings!
