Ingredients

For the Blondies:

  • ½ cup unsalted butter melted & cooled
  • 1 cup brown sugar light or dark
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup + 2 tbsp all-purpose flour
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp sea salt

For the Apples:

  • 1 cup apples chopped small
  • 1 tbsp brown sugar
  • ¼ tsp cinnamon
  • splash of vanilla extract

For the Glaze:

  • 2 tbsp unsalted butter room temperature
  • cup powdered sugar
  • 1 tbsp maple syrup
  • 1-2 tbsp heavy cream
  • pinch of sea salt

Instructions

  • Preheat your oven to 350°F degrees.
  • Line an 8x8-inch baking pan with parchment paper & oil.
  • Heat a small pan, add in the chopped apples, sugar, cinnamon & vanilla. Cook for about 5-7 minutes until cooked down & then set aside to cool.
  • Next, melt the butter, set aside, and let cool.
  • In a large bowl, add in the butter and sugar. Stir until well combined. Add in the vanilla extract and egg. Stir again.
  • Gradually fold the dry ingredients into the wet mixture with a rubber spatula, creating a thick batter. Then gently fold in the cooled apples.
  • Pour the batter into the prepared pan, spreading it out evenly.
  • Bake for 25-30 min, or until a toothpick comes out clean.
  • While the blondies cool, prepare the glaze. In a small bowl, add all the glaze ingredients. Use a hand mixer and mix until there are no longer clumps. Start with 1 tbsp heavy cream and add an additional if you need it.
  • Drizzle the glaze over the cooled blondies. Slice & enjoy!
