Creamy Shrimp Penne Pasta

Ingredients

  • 1 lb penne pasta
  • ¼ cup olive oil
  • 1 lb shrimp peeled & deveined
  • 4 cloves fresh garlic minced
  • 1 28oz can whole peeled tomatoes
  • cup fresh basil leaves chopped
  • cup flat-leaf parsley chopped
  • ½ cup heavy whipping cream
  • ½ cup parmesan grated
  • ½-1 tsp sea salt
  • ½ tsp black pepper
  • red pepper flakes optional, for serving

Instructions

  • Bring a medium to large pot of water and sea salt to a boil. Add in the penne pasta and cook according to the package until al dente. Drain and set aside.
  • Pat dry shrimp with paper towels to dry out. Season each side with about ½ tsp sea salt and pepper.
  • Heat a large skillet on medium high heat then add 1-2 tbsp of olive oil. Add in the shrimp and cook until its pink, about 3-4 minutes each side. Then remove it from the pan and set aside.
  • To the same pan, reduce the heat to low and add another 2 tbsp olive oil. Add in the fresh garlic and saute for a minute. Then add in the whole peeled tomatoes and crush them up a bit with your spoon. Season with some sea salt.
  • Next, add in the heavy cream and mix. Bring it to a boil and reduce the heat to a simmer for about 5 minutes.
  • Pour in your shrimp, pasta, parmesan, basil & parsley. Mix until everything is incorporated. Taste & season with more sea salt if needed.
  • Serve with extra parmesan and herbs. Enjoy!

Notes

For Storing: Store in an airtight container in the fridge for 3-5 days.
