Fluffy Pumpkin Spice Pancakes

Ingredients

  • 2 cups all-purpose flour
  • ¼-⅓ cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp pumpkin pie spice
  • ½ tsp sea salt
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup canned pumpkin puree
  • ½ cup plain greek yogurt
  • 1-1⅓ cup milk of choice
  • 2 scoops collagen peptides optional

Instructions

  • In a large mixing bowl, mix together all the wet ingredients.
  • In a separate medium bowl, mix together all the dry ingredients.
  • Pour the dry ingredients into the wet ingredients and mix until combined. Add a bit more milk if needed.
  • Heat a skillet with oil or butter, pour pancakes in using a 1/4 cup measuring cup. Let them cook until bubbles form, then flip. Top with the goods and enjoy!

Notes

For Storing: Store in an airtight container in the fridge for up to 5 days.
For Freezing: Freeze fully made and cooled pancakes in a freezer bag. To thaw, thaw in the fridge overnight, on the counter, or pop in the toaster!
