This easy creamy tomato soup is a delicious and comforting meal that can be made in 30 minutes or less. It's loaded with flavor and has a creamy texture that can't be beat. 28ozwhole peeled San Marzano tomatoes(you can also use crushed)
¾cupheavy cream
½cupchicken broth
¼cupparmesan cheesegrated
1yellow onionchopped
3-4garlic clovesminced
1tspsea saltmore to taste
½tspblack pepper
4fresh basilleaves
Instructions
Heat a medium to large sized pot. Then add the avocado oil or butter coating the pan.
Add the chopped onion and garlic. Season with half the salt and pepper. Mix well cooking the onion down.
Once onion is cooked down, add your canned tomatoes and chicken stock. Mix well. Add in your cream and remaining seasoning and bring to a boil on low heat.
Pour soup into blender and puree. We added the parmesan into blender instead of the soup but either will work.
Top with shredded fresh basil and more cheese if you desire! Serve with a slice of bread or grilled cheese and enjoy!

For Storing: Store leftovers in an airtight container in the fridge for 3-4 days!
