Greek Feta Turkey Meatballs

These greek feta turkey meatballs with rice and veggies are a delicious light and colorful dinner that full of flavor! It's a great meal to prep ahead and enjoy for lunch or dinner. The meatballs are easy to throw together in no time. The bowl is full of lots of goodness: meatballs, rice, veggies, olives, feta, and tzatziki. Feel free to dress it up with some other favorite Greek inspired additions! Hope you enjoy as much as we do!

Ingredients

For the Meatballs:

  • 1 lb ground turkey
  • ¼ cup breadcrumbs
  • 1 egg
  • ¼ cup fresh parsley chopped
  • ¼ cup feta cheese crumbled
  • ¾ tsp sea salt
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • ¼ tsp garlic powder

For the Rice:

  • 1 bag of Success Boil-in-Bag White Rice
  • 1 tsp grass-fed butter
  • ¼ tsp sea salt

For the Meatballs:

  • Mix all the ingredients together in a bowl. Roll into 16-18 meatballs
  • Bake at 425 degrees for 10-15 minutes depending on the size or until inside reaches 165F degrees and is no longer pink.

For the Rice:

  • Meanwhile, prepare your Success Rice. Pour about 4 cups of water into a medium pot and submerge 1 bag of Success Rice (use 6 cups of water to cook 2 bags of rice). Place the lid on the pot and bring water to a boil and then boil uncovered for 10 minutes. Remove the bag from the water with a fork and let it drain. Then pour it into a bowl, add butter and sea salt. Mix together!

For Serving:

  • For serving, add a scoop of rice, some meatballs and add the toppings. I mixed together cucumbers and tomatoes with olive oil and sprinkled it with sea salt and feta. Add this to your bowl and a scoop of hummus or tzatziki. Feel free to sprinkle with some fresh parsley. Enjoy!
