Greek Meatballs with Tzatziki & Veggie Medley

Greek meatballs with tzatziki & veggie medley is such a delicious & flavorful meal! It’s super easy to make all ahead, but it also comes together very quickly! You can throw the meatballs on a pita, in a rice bowl, or on a salad. There are so many ways to make this meal versatile and makes for fun leftovers because you can change it up depending on your preference!

What do you need to make greek meatballs with tzatziki, & veggie medley?

Meatballs:

  • Ground beef- Any ground beef will work and the percentages don’t matter. I’ve used 80/10 and 95/5, use whatever you like. 
  • Breadcrumbs- You can use plain breadcrumbs if you’re going to use the gyro seasoning, and if not you can use Italian breadcrumbs. Panko works just fine too!
  • Egg- The egg helps bind the meatballs together!
  • Super gyro seasoning- We love Primal Palate seasoning and their super gyro seasoning is delicious! You can also use any other greek seasoning or you can even just add 1 tsp dried oregano and 1 tsp dried basil and you’ll be good to go. 
  • Fresh Parsley- I love adding in fresh chopped parsley to give a great fresh taste. It’s not required, but it’s highly suggested.

Tzatziki:

  • Full fat greek yogurt- I love fage 5% greek yogurt. It’s so rich and creamy and works perfectly here. You can use whatever you prefer, just make sure it’s plain.
  • Cucumbers- I always add in some extra grated cucumber because I love lots of cucumber in mine!
  • Olive oil- If you want your tzatziki to be more like a dressing and less like a sauce. You can add in an additional tbsp of olive oil until you reach your preferred consistency.
  • Lemon juice- Adds a nice bright fresh flavor!
  • Dried dill- I always have dried dill on hand so I love to use that, but feel free to use fresh!

Tips for making it:

  • You can basically make everything ahead & then put it all in a bowl or pitas later! You can reheat the meatballs & warm the pitas if you prefer. So good! The tzatziki is best when it sits for a few hours so making that ahead is always great!
  • If you want to make homemade pitas, I highly suggest it! They’re so good and way easier to make than expected. I used THIS recipe and it was fabulous.

Ingredients

Greek Meatballs:

  • 1 lb ground beef
  • ¼ cup plain breadcrumbs
  • 1 egg
  • 1 tbsp primal palate super gyro seasoning or you can use italian breadcrumbs
  • ¼ cup fresh parsley
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp black pepper

Tzatziki:

  • 1 cup full fat greek yogurt i use siggis
  • ¼-⅓ cup grated cucumbers
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh or dried dill
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp black pepper

Veggie Medley:

  • 1-2 ripe tomatoes chopped
  • ¼-½ cucumber chopped
  • 1-2 tbsp olive oil
  • cup parsley chopped
  • sea salt & pepper to taste

Instructions

For the Meatballs:

  • Mix it all together in a bowl. Roll into 18 meatballs.
  • Bake at 425 degrees for 10-12 min or until inside is done.

For the Tzatziki:

  • Mix all the ingredients together & start dipping because it's DELICIOUS. I like to make this in the morning or the day before to let the flavors marinate together!

For the Veggie Medley:

  • Mix it all together in a bowl and you're done. Season with salt and pepper to taste!

To Assemble:

  • You can layer up the meatballs on a pita, add tzatziki and a side of veggies. OR add the meatballs to a bowl with rice or potatoes, tzatziki, and the veggies! Both options are pictured. Enjoy!

Notes

For Storing: The meatballs will last in an airtight container the fridge for 3-4 days. The tzatziki will last in the fridge for 1-2 weeks in an airtight container. The veggie medley usually will wilt so it’s best the day of and day after!

  6. Our family loves this meal- We do Costco Naan and then follow the recipe. Making the meatballs is super simple and I love just putting them in the oven.
