Chocolate covered cookie dough truffles taste just like raw cookie dough, but are a little more nutrient dense. They are the tastiest little treat. The flaky sea salt on top really brings them up a notch! Thomas claimed these little babies better than my actual cookie dough. That’s quite a statement, and I will say they are VERY good but nothing beats classic cookie dough in my opinion. We are obsessed with these truffles & they are perfect when you want something sweet without eating actual cookie dough!

Chocolate Covered Cookie Dough Truffles

Chocolate covered cookie dough truffles taste just like raw cookie dough, but are a little more nutrient dense. They are the tastiest little treat. The flaky sea salt on top really brings them up a notch! We are obsessed & they are perfect when you want something sweet without eating actual cookie dough!

Ingredients

  • 1 cup cashew butter unsalted
  • ½ cup almond flour
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ⅓-½ cup mini chocolate chips
  • 1 cup chocolate chips or chopped chocolate
  • 1 tsp coconut oil
  • flakey sea salt for topping

Instructions

  • In a medium bowl, stir together cashew butter, almond flour, chocolate chips, maple syrup, vanilla extract, and sea salt until everything is incorporated.
  • Place the mixture into the fridge for about 30 minutes to harden. Roll the dough into 16-18 balls.
  • Melt chocolate with coconut oil, either on the stovetop or in the microwave.
  • Dip each ball in the chocolate, place on a sheet pan lined with parchment paper. Sprinkle with flakey sea salt.
  • Store in the fridge for 1 hour to harden. Keep stored in a container in the fridge for up to 2 weeks! Or freeze & thaw for a few minutes before enjoying!

Notes

For Storing: Store in the fridge in an airtight container for up to 2 weeks.
For Freezing: Freeze in a freezer bag for up to 3 months in the freezer. Remove from freezer and thaw for 10-15 minutes before enjoying!
