Pumpkin Spice Peanut Butter Bars

Basically pumpkin spice peanut butter cups, but made even easier by making them into bars! They taste like your classic PB cup with a twist of fall and they are SO GOOD. The pumpkin makes the filling a super soft texture! Enjoy 🙂

Ingredients:

-2/3 cup peanut butter

-1/3 cup pure canned pumpkin

-1/4 cup maple syrup

-3 tbsp coconut flour (can substitute oat flour or almond flour)

-1/2 tsp pumpkin pie spice

-pinch of sea salt 

For the topping:

-1 1/2 cups chocolate chips of choice (can use dairy free if needed)

-2 tsp ghee or coconut oil

Directions:

In a medium mixing bowl, mix together all base ingredients until well combined. Line an 8×8 (or 9×9) pan with parchment paper. The 8×8 pan with result in a very thick peanut butter ratio where the 9×9 will result in more of an equal proportion of peanut butter to chocolate. Press the peanut butter mixture into the pan and set aside.

Melt the chocolate chips with the ghee or coconut oil (either on low on the stovetop or in the microwave). Pour the completely melted chocolate over the pb mixture. Store in the freezer for 30 min- 1 hour to harden the chocolate. Cut into squares and enjoy!

Storage: You can store them in the fridge or freezer. Up to you! I stored mine in the freezer in a freezer bag. To enjoy, I just thaw one of the counter for about 10-15 minutes before eating! Enjoy 🙂
