Ingredients:
-1 cup rolled oats
-1/2 cup shredded or flaked unsweetened coconut
-1 cup peanut butter
-1 cup medjool dates, pitted (about 10 large)
-1/3-1/2 cup maple syrup
-1 tsp vanilla extract
-1 cup chocolate chips
-2 tsp coconut oil
Directions:
In a food processor, blend the oatmeal and coconut until flour like consistency. Add in dates, peanut butter, maple syrup, and vanilla extract. If your dates are dry or a little, soak in hot water for a few minutes to soften. Roll into balls. Mine made about 22-24.
In a saucepan, heat chocolate chips and coconut oil on low heat. Stir until melted. Roll each ball in chocolate. Place on a baking sheet with parchment or a silpat. Cool in the fridge for 30 minutes. Enjoy!
Storage: They are good in the fridge for 1-2 weeks and also freeze great!
