It is safe to say this is our favorite delicious quick and easy taco soup! This really is the best taco soup in my opinion! It’s loaded with tons of flavor, meat, beans and corn. We’ve made this soup in the past, but perfected it. It sure is a crowd pleaser and will have everyone asking for the recipe! We hope you enjoy!

Quick and Easy Taco Soup

It is safe to say this is our favorite delicious quick and easy taco soup! This really is the best taco soup in my opinion! It's loaded with tons of flavor, meat, beans and corn. Ingredients

  • 1 lb ground beef
  • 1 yellow onion diced
  • 15 oz fire roasted diced tomatoes
  • 15 oz black beans drained
  • 4.5 oz diced green chilis
  • 1 cup frozen corn
  • 4-6 cups chicken bone broth (depending on how much you like!)

Taco Seasoning

  • 2 tsp sea salt
  • tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • ½ tsp black pepper

Instructions

  • In a large pot over medium heat, add the chopped onion. Sauté for about 2-3 min until the onion begins to soften.
  • Then add in the ground beef and sprinkle with the seasoning mixture. Cook until it’s browned and no longer pink.
  • Pour in the diced fire roasted tomatoes, diced green chilis, and broth. Stir to combine.
  • Then, stir in the black beans and corn. Mix everything together. Season with sea salt for taste if necessary.
  • Bring the mixture to a boil, then reduce the heat too low. Let it simmer for 15-20 minutes, allowing all the flavors to meld together.
  • Ladle your soup into bowls & garnish with your favorite toppings. We recommend queso fresco or shredded cheddar, a dollop of sour cream or greek yogurt, a sprinkle of cilantro, diced avocado, and a few tortilla chips for that extra crunch. Serve warm and enjoy!

Notes

 For Storing- Store in an airtight container in the fridge for 3-4 days.
