this recipe only took me FOUR times to get it right so when i say these are good, i mean they’re REALLY GOOD! carrot cake is one of my top desserts & these make me so happy!🥰

they’re super simple & made in one bowl! & then there’s the thickest layer of cream cheese frosting because it’s my favorite ever👌🏻 perfect little easter dessert for this weekend!🐣

MINI LEMON POPPYSEED BAKED OATMEAL🍋 because som

MINI LEMON POPPYSEED BAKED OATMEAL🍋 because sometimes you just want one!🙌🏻
.
it’s SUPER easy to make & based off my old single serving oatmeal just upgraded with lemon! here’s what you need:
.
-1/2 ripe banana, mashed
-1/2 cup quick oats
-1/2 cup cashew milk
-1 scoop vanilla protein
-1 tbsp lemon juice
-1 tsp lemon zest
-1 tsp poppyseeds
-1/2 tsp baking powder
-1/2 tsp cinnamon
-1/4 tsp vanilla extract
-1/8 tsp or a pinch of sea salt
.
in a small bowl, mash the bananas. add in the rest of the ingredients (or blend everything in the blender, except the poppyseeds, add last)! pour it all into a greased ramekin (i use a 4.5in or 6oz capacity) & bake at 350F degrees for 25-30 minutes until the top is cooked but still soft in the middle! drizzle with cashew butter & more lemon zest! enjoy!🥰

it’s super easy to just add in your everyday routine!! my favorite way to take it has either been in the pill form or adding it to my cold brew: 1/3 cup cold brew concentrate, 2/3 cup oat milk, & 1 scoop collagen😍

thomas’ favorite way is in his post-workout protein shake: vanilla protein, 1 scoop collagen, 1 frozen banana, & water all blended up🌪

is our life perfect?! OF COURSE NOT. thomas & i argue (especially over what’s for dinner)🙈, the kids make us tired, sometimes (more often these days) we have zero desire to cook, and we get frustrated & burned out just like everyone else!🤯

nobody’s life is perfect even if it may look like it! instagram is just a highlight reel & that’s okay because that’s part of the fun of sharing good & cute things! just don’t forget what it is, because the comparison game is easy to get sucked into!🙅🏼‍♀️

we personally choose to keep things real yet lighthearted around here! we don’t share a lot of the hard negative stuff because it’s personal first of all, & second there’s plenty of negativity on this app already & we hope to be a place light💫 so cheers to all our perfectly imperfect lives!🪴

meet thomas! my husband & partner in everything👩🏼‍🤝‍👨🏻 some of you might know him already, but he’s the guy behind almost all of the cooking! & he will forever be better at cooking than me🙌🏻

he’s a savory food guy all the way & never really ate dessert until he married me😎 still not that into sweets even with all my baking, but he puts up with me & most of the time will taste test them for me!👌🏻

he grew up in a home where his parents almost always had a hot meal on the table! his dad is an incredible cook, so i’m pretty sure it just runs in his Italian blood🍝 he didn’t go to any formal cooking school, he’s just learned from lots of practice!

-his fav desserts are simple: chocolate chip cookies or brownies🍪
-he’s incredibly organized & doesn’t like his stuff out of place
-he’s the middle child between 2 sisters
-he could eat his weight in any kind of fruit
-he quite an introvert & seems serious but is actually incredibly goofy & funny once you know him
-he’s signed up to run the 2021 key west half marathon
-he is super careful & T & I drive him crazy with our clumsiness
-he told me he was going to marry me on our first date
-he knows what he likes & doesn’t ever far from it
-his fav foods include: sushi, palak panner, dumplings, cowboy ribeye, & gummy candy🍭

a little more about me & this account! i started it back in 2014 when i was going through an eating disorder. i then went through a phase being overly obsessed with healthy eating! i have more about this on my blog post linked in my bio💕

i feel like i’m at a point where i eat pretty normally overall & don’t really think or stress over food like i used too & i’m incredibly thankful! if you’re struggling, i get it & my heart goes out to you! there IS hope!

last year, i fell in LOVE with baking & creating my own recipes🧁 i’ve always wanted to own a bakery & i consider this my little virtual bakery! getting to share my recipes with you is almost like we’re enjoying them together!🥰

i have a MAJOR sweet tooth & thomas literally calls me “sweets” as a nickname🍫 any desserts you see on here are created by me!🙌🏻

here are some fun facts about me:
-i’m the baby of 4 & would love 4 kids of our own (God willing)
-i fell in love with thomas at age 7 & had a crush on him my entire life
-i’ve went bungee jumping in cali & switzerland & now i think i’m crazy for doing that🤣
-i lived in barcelona for a few months after college & would love to live in europe one day
-i LOVE coffee, like really love it! i would drink 3-4 cups if i could but 2 is all my body can handle☕️
-my fav forms of exercise are walking & pure barre
-my fav foods: pizza, greek salad, french fries, peanut butter, ice cream, & baked goods (i can’t choose)🍪
-i birthed noah at home on the bathroom floor (not on purpose), because we didn’t make it to the hospital! thankfully my doula got there in time to catch him🙈
