An easy one dish dinner for the whole family👏🏻 Will definitely be making this one again!

These chicken tortilla casserole is loaded with everything you love about Mexican food all in one dish! You can totally layer the tortillas or you can bake it as is & then serve on top of tortillas🌮 Try it out!

Ingredients:
-1 14oz can diced tomatoes
-4oz canned green chilis
-1 1/2 cups chicken bone broth
-1 tbsp chili powder
-1/2 tbsp ground cumin
-1 tsp sea salt
-1/2 tsp black pepper
-15oz can black beans, drained & rinsed
-10oz frozen corn
-5 cups shredded cooked chicken (can use rotisserie or crockpot chicken like we did)
-12 small corn tortillas
-2 cups shredded Mexican cheese

For Garnish:
-diced red onion
-cilantro, chopped
-sour cream or Greek yogurt

Directions:
1. Preheat oven to 375F degrees.
2. In a medium mixing bowl, add in the diced tomatoes, green chilis, chicken broth, chili powder, cumin and salt.
3. Then add in the black beans, frozen corn, & chicken.
4. Stir until ingredients are well combined.
5. In a 9x13 casserole dish, add a layer of corn tortillas on the bottom. We fit 6. Then pour half of the mixture on top. Then add the cheese.
6. Repeat again another layer like lasagna. Tortillas, chicken mixture, & cheese. Cover with foil.
7. Bake in the oven for about 25 min.
8. Then uncover and bake for an additional 5-10 min. You can broil for 1-2 min if you want the cheese bubbly or let it slowly heat.

Definitely understand where the name came from, because this pasta is worth the hype🍝 Have you tried the viral marry me chicken pasta?

We made our own version & used our fav @kettleandfire chicken bone broth to make it more flavorful & nutrient-dense! It also adds extra protein👊🏻 A new staple for us for sure!

Ingredients:
-2 tbsp avocado oil
-1 lb chicken breast, cubed
-3 tbsp grass-fed butter
-3-4 cloves of garlic, minced
-1 cup @kettleandfire chicken bone broth
-3 tbsp all-purpose flour
-3/4 cup heavy whipping cream
-1/4-1/3 cup sun-dried tomatoes, chopped
-8oz penne pasta
-1 1/2 tsp sea salt
-1 tsp black pepper
-1 tsp oregano
-1/3-1/2 cup ground parmesan
-fresh basil, for garnish

Instructions:
1. Heat pan on medium high heat. Once heated, add 1 tbsp avocado oil.
2. Add chopped chicken & season with 1 tsp sea salt & the black pepper. Cook for 8-10 min or until chicken has reached internal temp of 165 degrees.
3. Remove chicken from pan. Add remaining avocado oil & the garlic. Cook on low heat for 30 sec. Add butter and keep stirring.
4. Once butter is melted add bone broth. Stir in flour making sure there are no clumps.
5. Pour in the heavy cream stirring in slowly. Keep stirring until it thickens up 1-2 min.
6. Reduce heat to low and add the sun-dried tomatoes, chicken and pasta.
7. Add in the ground parmesan cheese and stir well. Top with fresh basil & enjoy!

I saw @shelbymaryann do this trick & I had to try it myself!👌🏻

Add dried rice on the bottom of your Dutch oven before you put your bread in to bake!! Sometimes when you bake bread the bottom gets so hard it’s hard to cut & chew! The dried rice helps to prevent it from getting too crispy! Will definitely keep doing this because I really like the way it came out😊

CHOCOLATE BANANA PROTEIN MUFFINS with a secret ingredient!🍫🍌

@organicgirl baby spinach!! Their greens are our go-to! They’re always fresh, crisp, & clean and stay fresh through the whole clamshell, which saves me from going back to the grocery store.💯

I snuck their baby spinach into these healthy chocolate muffins since none of my kids like spinach and they had no idea!🌿

Ingredients:
-1 3/4 cup rolled oats
-1/3 cup cocoa powder
-2 spotty bananas
-2 eggs
-3/4 cup greek yogurt
-1/4 cup maple syrup
-handful of @organicgirl spinach
-1 tsp vanilla extract
-1 tsp baking soda
-1/4 tsp sea salt
-3/4 cup chocolate chips

Directions:
1. Preheat your oven to 350F degrees.
2. In a blender, add the rolled oats and cocoa powder. Blend until you get a flour-like consistency.
3. Then. add in the remaining ingredients minus the chocolate chips.
4. Blend until you get a smooth batter.
5. Add in the chocolate chips and mix with a spoon.
6. Grease and line (if needed) a regular muffin tin. Pour the batter in. You should fit 12 muffins.
7. Bake for 12-15 minutes until the top is set but still soft. Let cool on a cooling rack and enjoy!

What I’m doing to help support my body & baby during my 2nd trimester per @kalediagnostics!🤰🏼

Trying to include the essentials as much as I can:
-movement (walking, strength training, yoga/ pilates)
-eating enough/ nutrient dense foods
-sleep & rest
-time outside in nature
-nervous system regulation (singing, humming, gargling water to stimulate vagal tone, gardening, walks in nature, dancing, laughing, etc)

& these are the foods they have me focusing on specifically for the 2nd trimester🍍🥩🍳
-Eggs, beef liver, fatty fish, bone broth, sauerkraut, fermented pickles
-Increase of starchy grains & veggies like sweet potatoes & rice
-Adding in more easy to digest green veggies like spinach, broccolini, & kale
-More foods with vitamin C like pineapple, mango, melon, citrus
-Beets for liver support
-Coconut oil for good saturated fats & it helps you absorb fat-soluble vitamins A, D, E & K

This pregnancy has definitely been the hardest one to keep up with all the things especially with 3 boys, working, & moving! Haha but I do what I can when I can & it’s nice to have a list to remember too! Hopefully this is helpful for some!🥰

These are my boys absolute fav for easy breakfast prep! I usually make a big batch & toast them with coconut oil for the week🫶🏻

I love adding in cottage cheese for a protein boost! Or you can use Greek yogurt, a scoop of collagen or protein powder💯

Ingredients:
-2 cups rolled oats
-2 bananas
-2 eggs
-1/2-2/3 cup whole milk
-1/3 cup cottage cheese
-1-2 tbsp maple syrup
-1 tbsp ground flax or chia seeds
-1 1/2 tsp baking powder
-1 tsp cinnamon
-1 tsp vanilla extract
-pinch of sea salt
-1 tbsp butter or coconut oil, for cooking

Directions:
1. In a blender, add in all ingredients (except butter) and blend until smooth! If it seems too thick, add a little more milk.
2. The batter will thicken as it sits. Sometimes I add a splash more milk while some of the pancakes are cooking to thin it a little.
3. In a large skillet, heat butter until starts to bubble. Add ¼ cup pancake batter at a time to make pancakes.
4. Let cook on medium low for a few min until bubbles form on the top and the bottom is nice and browed. Flip and cook the other side for 1-2 min.
5. Repeat with the rest of the batter. Makes about 18-20 pancakes.
6. Serve however you like! I usually add an additional layer of coconut oil or butter on the pancakes and serve with fruit & maple syrup. Enjoy!
7. These freeze beautifully! Just thaw on the counter & then pop in the toaster to heat!

Saw a video of straining this way instead of pouring the pasta into the strainer & it’s kinda genius!💯

I mean you’re still getting the strainer dirty regardless so it’s not like you’re saving yourself dishes but if it just seems like a better way to do it! What do you think? 🤔

Here’s how I store my sourdough bread to keep it fresh🥖 I’m always asked so I figured a reel may help!

After I bake a loaf of sourdough, I usually cut it in half & then store it in a ziploc or a plastic bread bag (got some on Amazon)! I never cut slices until I’m going to eat it when it’s fresh because they’ll dry out. And NEVER store it in the fridge! I tried using the linen bread bags but they dried out immediately, not a fan!

I typically let my bread stay at room temperature for 3 days! After that, I’ll slice the rest of the bread and store it in a ziploc in the freezer. I sometimes put parchment paper between the slices so they don’t stick together. And then when I want to enjoy them, I’ll pull out a slice and toast or eat!👏🏻

Some may think this is simple & some may think it’s complicated! However, I doubled everything so dinner was made for ourselves too so it was pretty easy!💯 Here’s what I included:
-Our favorite marinated grilled chicken
-The best rice pilaf
-Roasted broccoli & green beans
-My artisan sourdough loaf (on our website, it would only let me link 3 recipes)
-Brownie cookies (I had dough balls already made in the freezer so all I had to do was bake them, so easy!)

Other suggestion with no cooking:
-rotisserie chicken
-bagged salad
-baguette & butter
-chocolate bars

A few tips:
-Pack the food in something they don’t have to return! Something disposable or something you don’t want back.
-Label the containers & you can include reheating instructions!
-Bonus: give them paper plates & napkins for easy clean up!

A fun change up from regular pizza! Our 3 little boys ate these right up💯 A quick & easy meal!

I used my sourdough English muffins (recipe in my sourdough ebook in our bio) & topped them with:
-marinara
-shredded mozzarella
-pepperoni on some

To make them: preheat the oven to 350F degrees. Bake them in a heated oven for 10-15 min until the cheese is melted & the muffins are warm!🍕 Enjoy!

Did anyone else grow up eating these bagels from Panera?! One of my absolute favs & brings back memories🥹

The cinnamon crunch bagels are the BEST so I had to make a homemade version using my sourdough bagel base!🥯

Comment “recipe” for the recipe! Then just before you bake the bagels just brush the bagels with melted butter & sprinkle with this mixture:
-1/4 cup brown sugar (light or dark)
-1 tbsp cane sugar
-1/2 tsp cinnamon
