What I Enjoyed This Week

Good morning & happy friday! I asked you guys if you wanted me to do posts like this and almost everyone said yes so I’m starting them! I always love reading other peoples (especially Hummusapien and The Real Life RD) They are 100% my inspiration for doing this, because I absolutely love when they do their posts like this. I kept forgetting to take pictures of some snacks and meals I ate, so these pictures are from the past week and maybe a little more. I have to get better at taking all the pictures.

Instead of doing what I eat in a day, I feel like it’s better to give you some meal idea/ inspiration for yourself. Every day of food looks different for me. Some days I need more, some days I need less so I don’t want anyone to compare my eats with their own 🙂 So that’s why I’m doing it this way.

BREAKFASTS:

Speaking of breakfast, it’s my favorite time of day. There’s nothing like waking up to a fresh day, drinking a glass of water, and then enjoying a cup of coffee. This starts my day off so great and I just live for the morning. I usually do local coffee with organic half and half and recently I’ve been adding in 1 scoop of collagen peptides for the added protein & it’s supposed to be great for your hair, skin, & nails. I can definitely always tell that my nails grow faster and my hair looks thicker when I go through phases of taking it!

359d51_be7db74ccc914fed930f4441547ad6bf~mv2PB&J Oatmeal  – I have a love hate relationship with oatmeal. I want to love it, but for some reason sometimes I find it to be so boring. But sometimes I crave it and it’s so cozy and satisfying. This was one of those times! Recipe is on my instagram, but it’s basically oats cooked with pea milk, collagen, flaxseeds, banana, and flaxseeds and then topped with our last strawberry, creamy peanut butter, and raspberry jam. Because PB&J is life.

PB&J Smoothie – I’m on such a PB&J kick, but I don’t think that ever goes away. This smoothie was vanilla protein, frozen blueberries, dates, spinach, peanut butter, and pea milk. Probably my new favorite combo EVER.

Chocolate PB Banana Toast – I also LOVE toast and think I eat it everyday. I’ve been using Alvarado Street Bakery’s sprouted sourdough, which is really good, but soon I plan to make my own sourdough. Nothing is better than homemade. So this is peanut butter, bananas, coconut shreds,m and chocolate chips. I loved the chocolate chips, but honestly I like this combo better with honey.

Sweet & Savory Toast – I LOVE having sweet and savory, because I can’t ever decide what I want. So one is avocado, sea salt, black pepper, and red pepper flakes and the other is peanut butter, banana, raw honey, and hemp seeds. I could eat that banana one EVERY day. I have noticed recently if I eat a breakfast without adequate protein, I don’t feel as good. So this was great but next time I’ll add an egg or some yogurt.

Avocado Toast – Toast on toast on toast. No shame. This is Sourdough sandwich bread from Trader Joe’s topped with the CREAMIEST avocado & ended up adding a fried egg to this with lots of seasoning! I’m all about spices and sea salt on EVERYTHING.

Blue Suede Shoes Smoothie – I went to North End Juice Co with my friend after Pure Barre and we both got the same smoothies and added in spinach. Vanilla protein, blueberries, banana, spinach, peanut butter, almond milk. Delicious & super peanut buttery which I loved. The only thing that wasn’t great was that it wasn’t very cold, I think I should tell them to start using frozen fruit, because that’s how the best smoothies are made!

Scrambled eggs & banana bread – This combo was a winner. A little mix of everything. Eggs scrambled in ghee with spinach and sea salt and pepper. Ended  up adding some hot sauce (I switch between frank’s red hot and sriracha). I froze slices of banana bread (recipe is from Joanna Gaines) and it’s delicious. I just thawed it on the counter for about an hour and topped it with peanut butter. You could also put it in the oven for a bit to warm it up. Love topping it with butter, ghee, or peanut butter. And a couple strawberries, because I love them.

 

LUNCHES:

I totally keep forgetting to take some photos of my lunches, but I got some photos. I’m going to work on getting photos. I usually always film my meals on my stories, but I don’t always photograph them.

Greek Salad with Greek Chicken Thighs & Quinoa – This was SO GOOD! The full recipe is on my instagram, but basically it’s a salad of mixed greens, carrots, tomatoes, feta, balsamic, olive oil, sea salt & pepper + greek chicken thighs + quinoa.

Korean-Inspired Turkey Tacos – We got this recipe from the SkinnyTaste Fast&Slow cookbook. She actually makes them into lettuce cups with rice and they’re fabulous as well. This time we went with tacos because why not. They’re super simple and easy. She calls for ground chicken but we used ground turkey, because it’s what we had and they turned out great! We layered some corn/wheat tortillas with power greens, the turkey mixture, avocado, sesame seeds, and ended up adding sriracha. Usually we’ll also add scallions, but we didn’t have any.

Chicken & Quinoa Salad – Recently this kind of combo has been sounding so good to me. It’s so refreshing. I threw everything in a mixing bowl, and mixed it well and poured it into a bowl. The bowl is filled with mixed greens, shredded rotisserie chicken, quinoa, carrots, cucumbers, avocado, feta, balsamic, olive oil, sea salt, and pepper.

Shrimp Tacos – We went out to lunch at the Boathouse at Sunday Park with my brother and sister-in-law this past weekend. We got the crab and artichoke dip with bread for an appetizer and it was fabulous. Then I ordered the dynamite shrimp tacos which were shrimp tacos with sriracha thai chili sauce, red cabbage, avocado puree, corn salsa, on flour tortillas and I got a side salad. SO GOOD. I’d definitely get these again!

 

SNACKS:

Since I’m trying to eat 6 dates a day in my last 4 weeks of pregnancy, most of my snacks and desserts have been dates. I’ve eaten SO MANY, haha. I love dates anyway so that’s a plus, but I haven’t had much of a sweet tooth for dessert (I usually always have something sweet after dinner). I’ve been eating so many dates they have either been satisfying my sweet tooth, or I eat some of them after dinner so I’m good to go. That being said, my snacks are a bit repetitive haha.

Dates with Almond Butter & Cinnamon – If you’ve never tried this combo, I swear it’s so good. Dates are caramel-y and delicious and the salty almond butter is the best combo. This is one of my favorite things to eat before Pure Barre.

Cheese & Crackers – Probably forever one of my favorite snacks. I could live off snack plates and cheese. I had a lot more crackers and a lot more cheese, I just remembered to snap a picture at the end.

Perfect Bar – Hands down probably my favorite protein bar when it comes to flavor, texture,m and everything. The peanut butter is my favorite one forever and always. I also love the chocolate peanut butter, chocolate hazelnut, and cranberry peanut butter. I mean they are all good, but I always choose peanut butter first. You can’t go wrong!

Julie’s Organic Ice Cream – One of my favorite ice cream brands! I did a big bowl of all three of these flavors: vanilla, coffee, and cookies & cream. SO GOOD.

Justin’s PB Cups – I typically like to make my own peanut butter cups, because I LOAD up the peanut butter. But these are super tasty!

Dates with Peanut Butter & Cinnamon – Like I said, I’ve been eating A LOT of dates.

RXbars – This is another way I love to get in some dates! I also loved these bars before the date consumption too. They’re chewy but I love it, and they’re awesome before barre or when you need a snack. I honestly don’t love all the flavors but the flavors I’ve found that I like are: chocolate sea salt, peanut butter, peanut butter chocolate, and maple sea salt.

Dates and Dates and Dates – Haha a lot of my life looks like me grabbing some dates out of here. It’s a good things I love dates! I’ve also made homemade larabars and date brownies, but I’m almost out of the larabars and I went hard on the brownies last week and haven’t been as into them this week.

 

DINNERS: 

Dinners this week have been a bit different, because we’ve been trying out Sunbasket. It’s a meal delivery service with mostly organic ingredients and it’s so delicious! We’ve also been prepping some more food because Thomas has been super into it this past week. We went to Costco and bought a BUNCH of things so we have lots of fun ingredients on hand.

Sunbasket Turkey Black Bean Tacos – We’ve been trying out Sunbasket the last 2 weeks and it is SO GOOD. Pleasantly surprised by how delicious, easy, and fresh everything is! These were turkey tacos with black beans, cucumber and roasted red pepper salsa, with queso fresco, cilantro, and lime. Cast Iron Chicken with Pesto + Roasted Greens Beans + Basmati Rice – This meal ended up being SO simple, but extremely tasty. Big fan and pesto can take any dish to another level!

Sunbasket Steak & Lyonnaise Potatoes – Another Sunbasket meal that knocked it out of the park. We cooked sirloin steaks in the cast iron with lots of butter, garlic, sea salt, and pepper and topped them with their horseradish mayo. Then they included russet potatoes and onions and we roasted those in the oven with olive oil, sea salt, pepper, and garlic powder. I sauteed the yellow squash in a pan with avocado oil, sea salt, pepper, & garlic powder (it was supposed to come with green beans, but they use the freshest ingredients so they swapped them for squash). We still wanted greens so we sauteed up our organic power greens (kale, spinach, and swiss chard) with olive oil, fresh garlic and sea salt.

Five Guys – I got the little bacon cheeseburger with pickles, lettuce, onions, ketchup, and mustard and we split lots of fries!

Cast iron chicken topped with leftover herb sauce from a Sunbasket meal. Roasted fingerling potatoes in olive oil and lots of seasoning. A salad of mixed greens, carrots, feta, balsamic and olive oil.
