Good morning! Sharing 6 easy breakfast variations to change up your game or just for a little inspiration. These are some of my personal favorites. All of them are pretty simple at the end of the day, but they’re fun! Because food should be fun & delicious. So let’s get to them 🙂
EGGS & TOAST– Such a yummy combination always. I’ve been digging scrambled eggs, but you can also do fried, hard boiled, you name it! I’m loving scrambled with spinach & cheese recently. I love to pair the eggs with toast (either sprouted wheat or local sourdough) & top that with something fun. Photo 1- sourdough, mashed avocado, feta, and sea salt paired with scrambled eggs with spinach & cheddar cheese. Photo 2- sourdough with peanut butter, apple, and hemp seeds served with 2 hard boiled eggs with sea salt and red pepper flakes.
OATS– Whether that’s hot oatmeal, overnight oatmeal, or my current favorite (all shown below), muesli! Muesli is basically the original overnight oats. It’s raw oats mixed with dried fruit, seeds, and spices. You can throw them on yogurt or anything, or for easier digestion, soak them in your milk of choice or yogurt overnight. My favorite way to eat them in soaked in almond milk overnight. In the morning, throw them in a bowl and top with whatever you want, or you can heat them on the stovetop first if you want them warm. Photo 1- Soaked muesli, chopped apple, whole milk yogurt, peanut butter. Photo 2- Soaked muesli, thawed frozen blueberries, whole milk yogurt, almond butter. Photo 3- Soaked muesli, chopped apple, peanut butter. I always add cinnamon & honey!
EGG SANDWICH– If you have time during the week, I love to make a yummy breakfast sandwich. They are so tasty & delicious! They usually are pretty quick, but if it’s too much effort you can save these for the weekend. Photo 1- Sprouted bread with spinach, a fried egg, bacon, cheese. Photo 2- Sprouted bagel with a fried egg, avocado, & spinach. Photo 3- Sprouted bread, fried egg, cheese, sautéed spinach.
TOAST– I love doing so many variations of toast. All sweet, all savory, one sweet one savory. You decide! Recently I’ve been loving sweet so picturing that here! Photo 1- Sprouted bread, pecan butter, banana, hemp seeds, cacao nibs, and lots of cinnamon after the photo. Photo 2- Sourdough, peanut butter on one, and jam on the other. Also love doing one with avocado & egg while the other has nut butter and fruit. Or avocado on both with feta, hot sauce, sea salt & black pepper.
PANCAKES OR WAFFLES– This one might sound time consuming, but it’s not! My favorite thing to do is make a batch of my favorite pancakes and then freeze leftovers. During the week, I just pop them in the toaster and serve them on a plate with some goodies. Simple as that. You could do the same thing with waffles, but I just buy the Van’s toaster waffles! Easy & tasty! Photo 1- Pumpkin pancakes drizzled in peanut butter, yogurt, cinnamon, banana. Photo 2- Toaster waffles with maple syrup, yogurt, cinnamon, apple, and perfect bar chunks. I always add maple syrup. I am a maple syrup girl all the way!
