Good morning friends & happy Thursday! Sharing another what I ate & why because you all seem to love these and I think they’re fun too! At least when I remember to actually photograph EVERYTHING I ate in the day, which doesn’t always happen because sometimes I get too excited about eating or I don’t feel like taking a picture of everything 🙂 Let’s get started!

Morning Snack– I started the day with more of a snack than a breakfast. So usually I get up pretty early to pump, get work done, and usually do some kind of movement. Typically I’ll drink coffee first and maybe a snack and then cruise through, but recently my stomach has been getting upset when having coffee on an empty stomach. So I’ve been trying to do it AFTER eating something the last few days and it’s made a HUGE difference. So on this particular morning, I woke up around 5:30am and drank two giant glasses of water. Then I had this PB perfect bar around 6:30am! I was meeting with my friend for coffee at 7am and I wasn’t super hungry, but wanted something before. These bars are so satisfying and one of my FAVS. I’m obsessed and the peanut butter is my favorite flavor ever! Followed by the pb chocolate chip, fruit & nut, and their current salted caramel flavor (which is actually a limited batch and online only). Praying they end up keeping it for good, because it’s YUMMY!

Coffee– We went to Ironclad, which is such a cute coffee shop in Richmond. There coffee is also SO on point. When it comes to coffee, I like it dark and strong! Sometimes I do half and half but I love the strong flavor. So we had coffee around 7:15am and caught up for a little while. It’s so nice to be able to get out and about once in awhile especially with a babe. It’s such a treat to be able to get a little girl time, even if it’s just an hour!

Breakfast– I came home to my boys and we made some breakfast all together. I was feeling pretty hungry by this time! I had a slice of local Billy Bread (it’s so yummy) toasted up and layered with goodies. We ran out of avocado so I did sautéed greens in olive oil with sea salt and parmesan to change it up. Topped it off with a fried egg in butter with sea salt and obviously all the black pepper. This actually filled me up, but I wasn’t super satisfied. I maybe should have done two eggs, but we were busy around the house so I just kept going. This was at about 9:30am!

Lunch– 12:30pm rolled around and I was hungry! I roasted up some green beans and tofu at the same time and served them with leftover roasted sweet potatoes. I covered the greens beans in olive oil, garlic powder, and sea salt and black pepper and roasted them at 425 degrees for 15 minutes. For the tofu, I pressed out as much liquid as I could and I seasoned it with olive oil, a few dashes of liquid aminos (like a soy sauce) and sea salt and pepper. I roasted them in the oven for 25 minutes and flipped them halfway. For the sweet potatoes, I cubed them and roasted them at 400 degrees for 30 minutes in avocado oil & sea salt. I haven never been a tofu girl, but recently we tried two Sunbasket meals that used tofu and tempeh and we loved them both so much. We thought it’d be fun to incorporate them every so often for a little change and they make for a super easy lunch! I drizzled everything in an asian dressing I had and it was super good! I ended up eating around 1pm!

Snack– I didn’t feel very full after lunch. I think I was still catching up from not feeling full/ satisfied from the morning and my lunch just wasn’t hearty enough. It was like 1:30pm and my brain kept thinking about food and my tummy still felt a little hungry. So I snacked on two of these peanut butter oatmeal chocolate chip cookies. One of my favorite recipes from my blog and one of you guys too! Basically oats, maple syrup, peanut butter, chocolate chips & a few other goods. They’re fabulous! I love doing them on yogurt. with ice cream, or just by themselves as a snack. After these, I FINALLY felt full and satisfied. Like I wasn’t going to keep thinking about food and could move on with my day and other things! In the past I would have just stayed at that not satisfied feeling and would have been literally dreaming about an afternoon snack at 3:30pm exactly. Not a minute before. It feels so much better now to be able to honor my hunger and move on with my day. Before, food controlled my day. Now it’s just a fun part of my day but not the main event!

Dinner– Thomas experimented with chicken pho. He’s been wanting to make it forever and it was a cold rainy day so he went for it. He works from home mostly now, so he’s able to do things like this and it’s been so fun! Anyway, he researched and went all out. He went to the Asian market and got certain things he needed & it was amazing. We both love pho but haven’t been out to get it in forever. I’ll have to get him write out the recipe at some point, but there’s a lot you have to do so I’m not going to go into that right now. I only have a short time to write this while T’s napping 🙂 But it’s basically loaded with rice noodles, chicken, homemade broth, scallions, bean sprouts, cilantro, thai basil, lime, shallots, and homemade broth! We ended up eating early around 5:45p-6pm. I was definitely feeling hungry by this point, but I didn’t want to snack before because I wanted to be hungry for my meal. & it was fabulous. I did drink a cherry lime lacroix while I waited!

Dessert- I’ve been obsessing over this chocolate bar. I love love love Theo and Alter eco (the sea salt ones), but we bought this brand and I hadn’t had it in forever. i forgot how much I loved it! So creamy and this raspberry one was super satisfying! I had 2 rows and it was exactly what I needed. This was around 6:30pm.
Then we got T to bed, and snuggled up on the couch to watch Parks & Rec. We just started watching this and we love it. It’s been so fun watching a show we both like and that’s funny. We loved The Office too! Anyway, that’s all for now! Hope you enjoyed & I’ll be back next week 🙂
