Ingredients:
-1 cup pecans (or walnuts)
-½ cup medjool dates, pitted (& soaked in hot water for a minute to soften if not already soft)
-½ cup raisins
-1 ½ cup rolled oats
-1 ½ cups shredded carrots (about 3 large carrots)
-½ cup shredded unsweetened coconut
-1 tsp cinnamon
-¼ tsp cloves
-¼ tsp ginger
-¼ tsp allspice
-¼ tsp sea salt
Directions:
Pit & soften the dates if needed in hot water. In a food processor, blend together the nuts, dates, and raisins until well combined. Then add in the rest of the ingredients & blend until all combined. If you want them harder, add more oats or coconut. If you want them softer, add a tbsp or two of nut milk until desired consistency. I liked mine just like this! Put the dough in the fridge for 30 min- 1 hour to harden. Roll into balls & snack away! Mine made 25 balls.
