Homemade maple olive oil granola makes for the cutest gift and just the tastiest topping or snack. I always forget how easy it is to make granola & it’s just so good homemade! This recipe is so simple and so good!
Ingredients:
-2 cups rolled oats
-1 cup pecans, chopped
-1/2 cup almond meal
-1/2 cup unsweetened shredded coconut
-1/2 cup maple syrup
-1/2 cup olive oil
-1/2 tsp cinnamon
-1/4 tsp sea salt
Directions:
Preheat the oven to 350 degrees. In a large bowl, mix together all the ingredients. Pour the granola onto a baking sheet. I used parchment paper as a liner. Bake for about 25-30 minutes until golden brown! You can mix everything around a little halfway through. Once it’s done cooking, let the granola cool completely & harden before breaking apart! Eat it by the handful, top your yogurt bowl or smoothie, or enjoy it however you’d like!
Notes:
-The granola should last for a few weeks in the jar!
-If you don’t have almond meal, you can always double the coconut.
-You can also replace the olive oil with coconut oil, if you prefer.
-Enjoy!!
