Pumpkin Baked Museli

-2 heaping cups Seven Sundays cinnamon currant muesli (or you can use another flavor or just rolled oats)

-1 tsp cinnamon

-1/2 tsp baking powder

-1/4 tsp cardamom (this spice makes it)

-1/4 tsp nutmeg

-1/4 tsp sea salt

-1.5 cups Malk Organics pecan holiday nog (or any milk)

-1 cup pumpkin purée

-1/4 cup maple syrup

-1 egg

-1/2 tsp vanilla extract


Mix the dry ingredients together in a bowl. Mix the wet in a separate bowl. Add the wet into the dry. Mix it until well incorporated & bake at 350 degrees for 30-40 min (mine took around 35) and let cool!

Store it in the fridge and heat it in the morning (or eat it cold, both are great!) & top it with whatever you’re feeling.
