Is there anything better than Peanut butter & jelly cups?!
-1 cup chocolate chips
-1 tsp coconut oil
-peanut butter (I like mine with sea salt & if not i’d salt the tops)
-strawberry chia jam or can use any jam (3 cups frozen strawberries, heated & mashed on the stovetop until liquid, then added 1/4 cup chia seeds, 2 tbsp maple syrup, and juice of one lemon. Cool & store it in the fridge overnight, this makes a lot so you can 1/2 the recipe or make it all & use it to top everything like i did!)
All you have to do is line a mini cupcake tin with 16 liners. melt the chocolate with the coconut oil until drippy. Fill the liners with a layer of chocolate. freeze for 10 min. Then later with about 1 tsp pb & 1 tsp jam & then top off with another layer of melted chocolate. Freeze for at least 30 min & enjoy! Best kept stored in the freezer & thawed for about 10 min before eating!
