Bed of romaine topped with
-cucumber
-grape tomatoes
-hummus
-jasmine rice (could also do quinoa, roasted potatoes, pita pocket, farro, etc)
Homemade tzatziki
-1/2 cup whole milk yogurt
-1/4 cup grated cucumber
-1 tbsp lemon juice
-1.5 tbsp dried dill
-1 tsp garlic powder
-1/4 tsp sea salt
Grilled chicken marinaded in
-olive oil
-lemon juice
-garlic powder
-thyme
-oregano
-thyme
-sea salt and pepper
-marinade for at least 30 min before cooking
All topped with my homemade greek dressing
-3/4 cup olive oil
-3/4 cup red wine vinegar
-2 tsp garlic powder
-2 tsp oregano
-2 tsp basil
-1.5 tsp black pepper
-1.5 tsp sea salt
-1.5 tsp onion powder
-1.5 tsp dijon mustard
Pour it all in a jar & shake it up real good & store on the counter!
