Peanut Butter Oatmeal Chocolate Chip Cookies

These cookies are LOADED with chocolate chips. They melt in your mouth & you could technically eat them for breakfast, because they’re made with oats!

Ingredients:

-2/3 cup peanut butter (preferably just peanuts or peanuts + salt)

-2/3 cup maple syrup

-4 tbsp vanilla bean ghee, melted (if using regular ghee, add 1 tsp vanilla extract)

-1 egg

-1 1/2 rolled oats

-1 1/4 cup rolled oats (mixed in blender until a flour-like consistency)

-1/2 tsp baking powder

-1/2 tsp baking soda

-1/2 tsp sea salt

-1 1/2 cups chocolate chips

Directions:

Preheat oven to 35o degrees. Mix together peanut butter and maple syrup in a large bowl. Melt ghee & add to peanut butter and maple syrup and whisk until well combined. Whisk in egg. Switch to a spoon and add in: rolled oats, ground oats, baking powder, baking soda, & sea salt. Mix well and then add in chocolate chips! Line 2 baking sheet with parchment paper. Drop cookies on sheets using a spoon. Bake for about 12 minutes, until cookies look set. Let cool on baking sheet and enjoy! Made 24 cookies.
