Happy Monday! I hope you had a great weekend. We stayed at Thomas’ parents house this weekend to watch their dog, so we basically spent the snowy/icy weekend cooking, baking, eating, and snuggling by the fire. It was so great, and now back to another fresh week! Here’s what I ate yesterday and why I ate it. This post isn’t to tell you what to eat or how much, because every body is different and so is every person. Some days I eat more. Some I eat less. I hope to just inspire you to try new things or just enjoy following along, because I always think it’s so fun to see others peoples too. Enjoy!
COFFEE – First things first, of course. I gotta have my coffee, and I see nothing wrong with that. I love everything about it. The smell. The coziness. The taste. The atmosphere. Makes my heart so happy. Recently, I’ve been drinking it black most days. I really actually love strong black coffee, and started drinking it this way because Thomas drinks it black and my half-and-half was going bad before I could finish it, and then I acquired a taste for black and honestly prefer it most of the time. There’s other times I love it nice and creamy with organic half-and-half. Just depends on what I’m feeling. I usually always add a scoop of collagen peptides, but didn’t bring any with me. So this is just coffee and half-and-half. Also, if you don’t add cinnamon to your coffee grounds before brewing, DO IT. Best flavor ever.
BREAKFAST– Thomas & I did a Pure Barre on Demand workout to start off our day and it was so great. I’ve had a lot of questions about this, and you don’t have to be a member of the studio to have an account. It does cost money, but you can sign up right online and do everything from home. I’m loving it! & then made some breakfast. I was craving savory and some good protein. I was also pretty hungry, so I knew I wanted something that would fill me up and hold me over. I typically feel the hungriest in the morning so I usually like to have a nice full meal to bridge me to lunch! I did two eggs scrambled with spinach and parmesan in grass-fed butter and a slice of homemade bread (this is the recipe I used and it was so simple) with 1/2 an avocado, sea salt, and red pepper flakes.
LUNCH – My breakfast held me over for like 3-3.5 hours and we were just hanging around so I was feeing ready for lunch. I wasn’t starving, but started feeling ready for some food. I had some dinner leftovers for lunch. We had grilled salmon (Thomas seasoned it with sea salt, pepper, dried parsley, garlic powder, and red pepper flakes) and it was delicious. Then we made roasted broccoli (375 degrees for 20-25 minutes in avocado oil, sea salt, pepper, and garlic powder) and roasted sweet potato wedges (375 degrees for 30 min, flipped halfway, and covered in avocado oil and sea salt). I usually do less oil on my sweet potatoes and cook them hotter/ broil at the end because I like the crispy, but I needed them soft for T. Then my mama made this spaghetti squash recipe from Pioneer Women, and it was delicious! I was craving some yummy veggies plus leftover are a wonderful thing. I warmed this up, because I knew I’d enjoy it more and topped it off with feta, because I love cheese. I used to be afraid of it, but started adding it into my everyday life and that helped me break that fear. Now I eat it when I want it with something and other times I don’t. It personally doesn’t hurt my stomach though so I also don’t worry about it.
SNACK – I usually am good without a snack in the morning, but pretty much always have an afternoon snack. I find that if I don’t, I’ll get too hungry and dinner and eat more than I needed or still be super hungry after dinner and want more food. There’s nothing wrong with that, and I eat dessert after dinner most days, but I’ve just found I feel better when I get a little snack in the afternoon. So here’s one of forever favorite snacks: banana and peanut butter. I really wanted something sweet, but knew I was making cookies to have for after dinner so figured I’d have fruit to keep me going and bananas are my favorite. Also, so obsessed with this Costco peanut butter. I also have a salty kick to it, which is my favorite, because I love the sweet/ salty combo and salt brings out flavor!
That’s everything this time around! We watched a movie and were in bed by 8:30pm. Everyone was exhausted, because no one slept well the night before (including T haha) so early bedtime for everyone. Last night was a great night, and we’re all refreshed and feeling good today! Hope you enjoyed my eats 🙂
