Blueberry and Peach Cobbler

I’ve made this Blueberry & Peach Cobbler for the 3rd time this summer! It’s a hit every single time! I added peaches this time & it was incredible (best one yet) This recipe is from @thepioneerwoman

Ingredients
For the fruit mixture:
4 cups blueberries
4 cups peaches (about 3 large)
2/3 cup sugar
1 tbsp lemon juice
1/4 cup all-purpose flour
2 tbsp cold salted butter, cut into pieces

For the dough:
2 1/2 cups all-purpose flour
2 1/2 tbsp sugar
1 tbsp baking powder
1/2 tsp sea salt
1 1/2 sticks cold salted butter, cut into pieces
3/4 cup milk
1 egg

Directions
Preheat oven to 425 degrees. Slice the peaches. Mix the berries & peaches with the sugar, lemon juice, and flour. Pour into a 9x13in pan & top with the chopped 2 tbsp cold butter.

In a medium bowl, mix together the flour, sugar, baking powder, and sea salt. Add in the chunks of butter and use your hands to cut the butter into the mixture. In a separate small bowl, mix together the egg and milk. Add into the dry ingredients and mix together until combined. It should be fluffy and lump (like a biscuit). Grab pieces of the dough and dot them over the fruit. Then sprinkle the top with extra sugar.

Bake for 20 minutes covered lightly in foil. Remove foil & bake for another 20-25 minutes. Let cool & serve with vanilla ice cream
