Peanut Butter Honey Energy Bars

My child eats all of my protein bars. Anyone else? Don’t get me wrong, I don’t mind him eating them but when he wants a full-sized one every single day, it gets to be an expensive habit. I tried making him energy balls, but it wasn’t the same and he wanted a “bar”. Kids, I swear! So I made him, basically my energy ball recipe, but into bars! Happy to report that he joyfully eats one while calling it a “bar”, which is quite the parent win in my book!!!!! Good for not just kids, but anyone of course! Easy, simple, yum!

Ingredients:

-2 cups rolled oats
-1 cup peanut butter
-1/2 cup honey
-1/4 cup ground flaxseed
-pinch of sea salt
Directions:
In a food processor, blend the oats, flaxseed & sea salt until a flour-like consistency. Add in the peanut butter & honey & mix until well incorporated!
If you don’t have a food processor, just blend the oats in a blender until flour-like consistency. Pour them into a mixing bowl with the rest of the ingredients & mix until combined! You don’t have to blend the oats, but it just gives the bars a much smoother, bar-like consistency!
Press the dough into a parchment lined 8×8 pan. Let them harden in the fridge for about 30 min, then cut them in squares, rectangles, whatever you want! Stores best in the fridge!
You can always add things like chocolate chips, raisins, dried coconut, up to you! Also, feel free to substitute the flaxseed for chia seeds or omit! Enjoy!
