Hi guys! It’s been a while since I wrote an actual blog post rather than just a recipe, so hope you’re all doing well/hanging in there right now. What a crazy time to be alive honestly. Our life over here has been so good, and definitely a lot busier now that we have 2 kids. It’s been so fun watching T become a big brother, and become such a boy. He is so sweet with Noah, most of the time, but he definitely has his moments! We of course have ups and downs everyday, but honestly that’s to be expected. And life isn’t supposed to be perfect. We wouldn’t be able to fully appreciate the good stuff if we didn’t have to deal with the hard stuff.
Anyway, long story short, we are definitely enjoying life with two! Not saying it’s easy, but just saying I’m so grateful. Obviously, we aren’t that far in, but so far transitioning from one kid to two has actually been easier mentally and harder physically. I talked a little bit about this on my post the other day, but wanted to share a little more here. I just feel so much more confident having a newborn the second time. I don’t sleep with one eye open or jump at every sound Noah makes, because no one ever told me how noisy newborns are when I had T! I also love the newborn stage especially when they start chunking up a bit, I just think they’re so sweet and I love that I can hold them and they stay in one place haha. Not everybody loves the newborn days though. It’s been harder physically just because having to always be watching/ chasing after T or cooking for him/ cleaning up after him, and then also nursing/ holding Noah, etc. I like to call T my cardio training, and Noah my strength training haha!
Overall, it’s been great and I’m super grateful for Thomas because he is incredibly hands on and such an amazing daddy! Sometimes our biggest challenge can be meal times. We are either tired, someone is crying or needing attention, or we just don’t have any motivation/ ideas. We usually can make something for dinner that’s quick & simple, but lunch has been a struggle if we don’t have leftovers. I’ve been mostly sticking to eggs with something or a snack plate. Both of those are delicious options, but when High Liner Foods and Kroger reached out about working together I was so excited! Their Sea Cuisine Honey Chipotle Salmon are the perfect quick protein to throw in the oven for lunch or dinner!
If you haven’t heard of Sea Cuisine, it’s a line of responsibly sourced seafood meals with a variety of options! I found this honey chipotle salmon at Kroger, and tried it out and it was absolutely delicious. The crusty outside seriously adds the best flavor and texture! Their fish is wild-caught, full of omega 3 fatty acids and they offer a variety of options! They also offer other flavors of salmon as well as other fish like tilapia and scallops. I’m definitely going to be trying out some of their other flavors too. When I checked our Kroger, they seemed to have a pretty great stock of their products!
I went ahead and paired my salmon with a quick salad using what we had and leftover roasted sweets potatoes. For the potatoes, I just covered them in avocado oil and sea salt and roasted them at 400F degrees for 35-40 minutes! Such an easy and satisfying meal that keeps me fed and fueled to keep up with these precious little boys of mine. I always feel like protein can be a harder item to have ready for lunch if we aren’t prepared or don’t have anything thawed, so this is such a great option!
