Peanut Butter Chocolate Protein Bars

These are just like my peanut butter honey energy bars, but I added collagen for protein & chocolate chips for fun! They are fully loved by the whole family & are in devoured VERY quickly! Easy to make and cheaper than buying a bar, even though I still do, but these are a winner!

Ingredients:

-1 1/2 cups rolled oats (or quick)

-1 cup peanut butter

-1/3-1/2 cup honey (or maple syrup)

-1/3 cup mini chocolate chips

-1/4 cup ground flaxseed

-2 scoops collagen (or protein powder)

-1/4 tsp sea salt

Directions:

In a food processor or blender, blend the oats, protein powder, flaxseed & sea salt until a flour-like consistency. Pour them into a large mixing bowl and add in the peanut butter and honey. Once everything is well combined, sprinkle in the chocolate chips & mix. It should be nice and thick!

Press the dough into a parchment lined 8×8 pan. Let them harden in the fridge for about 30 min, then cut them in squares, rectangles, whatever you want! They stores best in the fridge and usually up to 2 weeks! They also freeze great. You can always add always add other things like raisins, dried coconut, up to you! Also, feel free to substitute the flaxseed for chia seeds or omit! Enjoy!

  1. These are delicious! And my friends agree! They remind us of “Perfect Bars,” but are cheaper than buying those from the store!
