Maple Pecan Baked Oatmeal

Nothing says the holidays like some maple pecan goodness and this time turned into baked oatmeal. It tastes like literal dessert and is FABULOUS. You need it, trust me on this one!

Ingredients:

-2 cups rolled oats (or quick)

-1 1/2 cups milk of choice (I used cashew)

-1/3 cup plain greek yogurt

-1/4 cup maple syrup

-1 egg

-1 tsp baking powder

-1 tsp vanilla extract

-1 tsp cinnamon

-1/2 tsp sea salt

Topping:

-1 cup crushed pecans

-1-2 tbsp maple syrup

-pinch of sea salt

Directions:

This baked oatmeal has two options! You can either pour all of the base ingredients in a blender and pour it into your 8×8 baking pan OR you can mix all the base ingredients in a bowl. The blender makes for a more cakey/ doughy texture and mixing it in a bowl will give it a more chewy texture. I personally LOVE both! This time, I went with blending everything together. I poured it into a greased 8×8 pan and baked it in the oven at 350F degrees for 20-25 min!

For the topping, you can either mix all the ingredients together and pour it over the oatmeal to bake in the oven. OR you can make the topping on the stovetop (just pour all the ingredients into a pan and cook on medium heat until all the maple syrup is soaked in and set aside to let cool/ harden, it’s literally like candy) and then sprinkle it on if you’re feeling it! I did a plain base so I could change up the topping!

Hopefully that all makes sense! I assembled mine with a slice of oatmeal, the maple pecans, and a drizzled of creamer for some added deliciousness. Hope you enjoy if you make it 🙂
