These chocolate protein banana muffins are truly probably one of the best recipes I’ve created as a mom! They’re loaded with nutrients, and are basically one of the only ways I can get my kids to eat oatmeal these days. They taste like a treat, and my kids love them! Perfect for breakfast, a snack, or a treat! They are full of protein as well, especially if you add in collagen. Hope you enjoy them as much as we do!

What you need to make chocolate protein banana muffins + substitutions:
- Quick or rolled oats- I used rolled oats, I love to buy the big bag of One Degree Organic sprouted organic rolled oats from Costco. They’re easier to digest! Quick oats would also work just fine, but steel cut won’t work.
- Cocoa powder- I love to use Now Foods organic cocoa powder (Code LEX for 20% off on their website). You could also use cacao powder if you prefer.
- Bananas- The bananas add sweetness and creaminess. I haven’t substituted with anything else yet for these chocolate protein banana muffins.
- Eggs- The eggs helps bind the recipe. You could substitute with flax or chia eggs.
- Greek yogurt- I prefer using plain greek yogurt, like Fage 5% or 2%, but you can also substitute with dairy-free if needed.
- Maple syrup– Maple syrup is my preferred sweetener but you can also use honey or brown sugar.
- Fresh spinach- This is totally optional! Sometimes I add it and sometimes I don’t, but it’s a great and easy way to add some spinach to my kids diet and you can’t taste it at all!
- Vanilla extract- A key to any baked good in my opinion!
- Baking soda- Baking soda helps the muffins to rise.
- Sea salt- I don’t bake anything without salt. It’s what helps bring the flavor out in a recipe. This is our favorite sea salt and you can use the code DADDIO for 15% off.
- Chocolate chips- I used semi-sweet chocolate chips in this recipe. Feel free to use dark chocolate, milk chocolate, chunks, chips, chopped chocolate bar, you name it!

Chocolate Protein Banana Muffins
Ingredients
- 1¾ cup rolled oats
- ⅓ cup cocoa powder
- 2 spotty bananas
- 2 eggs
- ¾ cup greek yogurt
- ¼ cup maple syrup
- handful of fresh spinach
- 1 tsp vanilla extract
- 1 tsp baking soda
- ¼ tsp sea salt
- ¾ cup chocolate chips
- 1-2 scoops collagen (optional)
Instructions
- Preheat your oven to 350F degrees.
- In a blender, add the rolled oats and cocoa powder. Blend until you get a flour-like consistency.
- Then. add in the remaining ingredients minus the chocolate chips.
- Blend until you get a smooth batter.
- Add in the chocolate chips and mix with a spoon.
- Grease and line (if needed) a regular muffin tin. Pour the batter in. You should fit 12 muffins.
- Bake for 12-15 minutes until the top is set but still soft. Let cool on a cooling rack and enjoy!
