Gingerbread Balls

I love ALL things gingerbread, and these balls can be enjoyed for breakfast, lunch, a snack, whatever you want! They’re super easy too, like REALLY easy and minimal ingredients!

Ingredients:

-1 cup dates (soaked in hot water for about 3 minutes)

-1 cup walnuts, or nut of choice

-1 tbsp blackstrap molasses

-1 tsp cinnamon

-1 tsp ginger

-1/4 tsp cloves

-1/4 tsp nutmeg

-1/4 tsp sea salt

Topping:

-chocolate of choice for drizzling

-a mixture of coconut sugar & cinnamon for rolling

Directions:

Soak dates in hot water. In a food processor, add in the walnuts and pulse until crumbles. Add in the dates and everything else and process until combined. Put the dough in the fridge for about an hour to harden up. Roll into balls. Drizzle or roll! Then store in the freezer or fridge. They’re squishy so you don’t even need to thaw them. Enjoy!
