Fun Fact: Soup is one of Thomas’ favorite foods. Not mine haha. I like it, but I mean he could eat for breakfast, lunch, and dinner. One soup we can both agree on though is pho! He’s been wanting to make his own forever so he finally did and I’m so impressed! It turned out delicious and I had him write out the recipes and instructions for you guys to share.
So here’s Thomas’ step-by-step recipe for you:
1st step: Create Broth
-Bring water for broth to boil (add salt to increase boil time).
In the meantime…
-Use two yellow or white onions. Cut in half with or without peel.
-Use two big pieces of ginger and slice in the middle length wise.
-Place onions and ginger on baking sheet face up and broil for about 7 minutes.
-Slice 1 daikon radish length wise.
On a separate frying pan roast the following until an aroma comes out – 6-8 minutes:
-6 star anise
-coriander seed – 1 1/2 tsp
-red pepper corn – 1 1/2 tsp
Season whole chicken with salt and pepper
Once water is boiling, add the following into water:
-Whole chicken
-onions
-ginger
-using an tea strainer or filter (or we used a nut milk bag) add the spices into bag and hang over side of broth
-daikon radish
Reduce broth to simmer and let cook for 1 hour.
After 1 hour remove the onions, daikon and spice bag.
Remove the whole chicken and let rest for 30 minutes.
Add the following to the broth:
-1 tbsp of salt
-1 tsp of fish sauce
-1 tsp turbinado sugar
-whole shallots peeled
Let broth cook for another 1 hour or longer. Season with more salt through out to taste.
To create your bowl, add toppings and noodles. Cook your favorite asian noodles. Add noodles & pulled chicken pieces to a bowl.
Then top with your favorites:
-thai basil (regular basil works as well)
-sliced green onion
-bean sprouts
-lime
-sriracha
-cilantro
