Good Morning! Finally sharing another one of these, because you guys seem to love them, which I don’t blame you because I always love these kinds of posts too! I think they’re so fun, so I hope they inspire you to eat some yummy food! I’ve said it before and I’ll say it again though, this isn’t to tell you what or how much to eat in a day. Everyday is different and every body is different. Eat for you!!! So let’s start 🙂
Coffee– I always start my every morning with coffee. I usually go with 1 of 3 options depending on my mood: black with a scoop of collagen, with organic half and half and a scoop of collagen, or blended with 1 tsp ghee, cinnamon, and a scoop of collagen. I went with black with collagen, because I had banana bread and ice cream late the night before so I wasn’t feeling creamy coffee. Black was sounding better, and T had randomly been up for a couple hours on this night (which thankfully doesn’t happen anymore) and I was feeling super tired. I planned to go to Pure Barre, but decided to skip to make sure I got enough sleep. So I chose coffee and a slow morning instead!
Breakfast– I usually wake up anywhere between 5-6am, I’m doing a blog post on my morning routine soon, but I like to do my little routine and then typically have breakfast between 7:30-8am! I was hungry at 8 so I made a nourishing plate of goods to satisfy me for the morning! An english muffin with butter (these muffins have been on repeat, I’m obsessed) and some arugula that needed to be used up with 2 eggs scrambled in ghee and parm and salt, pepper, and red pepper flakes. I talked about this on my post that morning, but I went for a balanced plate for breakfast to nourish me from the inside out to feel good & fueled for the morning, because lack of sleep makes me want all the sweets haha so I felt like this would be my best option and honestly it was SO satisfying!
Coffee #2– I don’t always drink 2 coffees. I try to stick to just one in the morning, but I definitely find myself craving two most days so I just try to drink it before 12pm so I don’t have a hard time going to sleep. We had some extra warm coffee in the pot, so I decided to enjoy this when T went down for his morning nap. Did a cup with just half and half and it was fabulous. Just the little extra boost I needed!
Snack – I was starting to get hungry around 11am and knew I was going on a walk with my friend at 12. I didn’t want a full lunch at this point, so I decided to go for a snack instead. Banana and nut butter is hands down one of my fav snacks. Also if you can’t tell these two things are probably my favorite food groups and I usually have them daily haha. I went with a banana sprinkled in cinnamon and tried out two of Project Juice’s new nut butters they sent me to try. The left is the oatmeal raisin made with almond butter and the right is chocolate chip cookie dough made with cashew butter. Definitely thought I was going to like the chocolate chip better, BUT that oatmeal raisin is DREAMY! & yes I ate all that nut butter, I’m not afraid of fat like I used to be. It’s such a great source of fuel and it tastes SO GOOD. Perfect snack to hold me over for our walk!
Lunch– After T and I got back from our walk, I put him down to nap and warmed up some leftover Sunbasket around 1:45pm. This was jasmine rice (probably my favorite kind) with veggie curry. It was full of red bell peppers, peas, onions, and a super delicious sauce. Topped it with some old cilantro that really needed to be eaten. This was so warm and satisfying after a cold walk outside! My favorite lunches are always leftovers, because then it’s all ready and easy and you don’t have to think about it too much. So when we cook we usually try to make extra to have for lunch the next day. Other favorites are sandwiches, tuna salad, big salad/ grain/ protein bowls, or a big snack plate loaded with all the things!
Wine & Salad– We went to pick up dinner for my family and brought it over to my sister’s house for a little get together. I had a glass of this Invetro wine, which is one of our favorite Italian wines! I don’t really have any system with wine. We definitely don’t drink it every night but if Thomas & I want a glass at night, we’ll enjoy one! Honestly, wine to us is apart of the meal and we don’t see it as a bad thing, a way to get drunk, but as an accompaniment to a yummy dinner! Everyone is different, and allowed to have their own opinions about this, but this is how we view it in our family. We all had a mixed greens salad that I made to bring with cucumbers and shredded carrots and my homemade balsamic AKA my favorite dressing ever that I will make on repeat (1 cup olive oil, 3/4-1 cup balsamic vinegar, 3 tsp dijon mustard, 2 tsp honey, 1 tbsp minced shallot, 2 garlic cloves minced, and salt and pepper to taste)! Throw it all in a jar, shake it up good, and store on your countertop for a few weeks! Even my brother said he’s not a fan of balsamic but he said he loved this.
Dinner– Pizza from my fav place in Richmond: Pupatella. It’s just so good every time! I didn’t get a photo of my actual plate, but here’s one of our favorite pizza there. The diavola. It’s Neapolitan pizza and this one has spicy salami, mozzarella, and basil and it’s the dreamiest thing in the world. We get it everytime! I had a slice of the diavola and a slice of the prosciutto and mushroom. I usually find that two pieces make me feel my best and nice and satisfied. If I’m hungrier, I’ll eat more, or if I’m not, I’ll eat less. Just depends but I always like to make sure I’m hungry for this dinner! We ate around 6pm!
Dessert– I go throw phases with having something sweet at night, and right now, I’m on the sweet train. Okay, honestly I’m almost always on the sweet train! But we got home around 7pm, and I wanted one of these peanut butter cookie dough bars (recipe is here on my feed!), because they taste like a giant reese and I’m obsessed. There’s nothing better than that in my opinion. Ate one of these babies and then Thomas & I snuggled up on the couch after putting T to bed and watched a documentary and we were both in bed by 9pm haha. We like to go to bed early and we were exhausted anyway!

Trust me, I get it! I’ve been there and it gets confusing. I always think it’s important to quiet out the noise and what everyone is telling you to eat and to focus in on what you actually like. It takes time to discover that again, but it’s possible. Try to make it fun, because food should be fun and enjoyed 🙂
