Pumpkin Chocolate Chip Oatmeal Bars

Pumpkin chocolate oatmeal bars are the perfect little morning or afternoon snack or even breakfast. Simple ingredients, one bowl, minimum effort! I love to pair it with some yogurt and nut butter for a full breakfast! You can eat them cold or warm! Enjoy!

Ingredients:

-2 cups rolled oats

-1 cup pure canned pumpkin

-1/2 cup maple syrup

-1/2 cup pecan butter (can sub any nut/ seed butter)

-1 tbsp chia seeds

-2 tsp vanilla extract

-1 tsp pumpkin pie spice

-1 tsp baking soda

-1/2 cup chocolate chips

Directions:

Preheat your oven to 350 degrees. In a large bowl, mix all the ingredients together. Pour it into a greased 8×8 pan. Bake for 30-35 min until the middle is set. Try to let them cool before slicing so it’ll set better! They do get a little crumbly/ messy but trust me, you won’t care 🙂

  1. I made these this weekend but subbed a cup of mashed banana for the pumpkin and replaced pumpkin pie spice with cinnamon. Turned out so good!
