My Go-To PB Chocolate Energy Bites

We are energy bite people in our house. I make them almost weekly. Such an easy snack that the whole family loves! I have tried so many different recipes, but I always come back to this one. So simple, incredibly versatile, and always delicious. Enjoy!

Ingredients:

-1 1/2 cups rolled oats (or quick oats)

-1 cup peanut butter (or any nut/ seed butter)

-1/3 cup honey (or maple syrup)

-1/4 cup ground flaxseed (or chia, hemp, or omit)

-2 jojo’s chocolate bars (you can use the code LEX10 for 10% off), chopped (or 1/2 cup chocolate chips)

-1 tsp vanilla extract

-dash of sea salt

Directions:

In a blender or food processor, pulse the rolled oats until they resemble a quick oat type consistency. You don’t HAVE to do this step but I feel like it makes the texture of the balls more doughy and just perfect. Pour the oats into a mixing bowl with the rest of the ingredients except the chocolate. Mix everything together. Add in the chocolate. Mix until combined. Roll into balls. Mine made 14! Store in the fridge for up to 2 weeks! Enjoy!
