This easy delicious lasagna soup has you covered! What you need to make this easy delicious lasagna soup + substitutions:

Ground beef- A versatile, budget-friendly protein that works for so many dishes. We’ve been getting ours from a local farmer, but when we don’t have that we always try to choose grass-fed and organic. Italian sausage or a blend of ground and sausage would work as well.

Yellow onion- Yellow onions are a kitchen essential and add so much flavor to meals. Their versatility makes them the perfect base for soups, stews, and countless savory dishes, adding layers of flavor with ease.

Garlic- Garlic is a powerhouse ingredient that brings lots of flavors, and is also great for your immune system.

Tomato sauce- Tomato sauce helps bring some thickness as well as flavor. It’s the perfect base for soups, pasta, and stews, easily absorbing herbs and spices for a customized taste.

Tomato paste- Tomato paste can transform soups, sauces, and stews, adding great flavor.

Beef broth- Lately, we have been using our homemade broth in everything, but we absolutely love the brand kettle and fire when we buy store bought. You can use the code DADDIOSKITCHEN for 20% off. This is not a low sodium option, but if you do you use another broth with low sodium add more salt to taste!

Lasagna noodles- Lasagna noodles are what makes it lasagna soup obviously! If you use the no boil option, it will cook much faster. If you choose the regular noodles, it’ll take much longer but still works just fine. You can also precook your lasagna noodles if desired if you use the regular. Also, technically you can use any noodle if you’d really like!

Ricotta- Ricotta is a creamy, mildly sweet cheese that adds a luxurious texture to both savory and sweet dishes. It makes this recipe so creamy.

Mozzarella- This also adds so much creaminess and comfort to this easy delicious lasagna soup.

Parmesan- Parmesan is the perfect finishing touch for this dish!

Easy Delicious Lasagna Soup

Equipment

  • Dutch oven or large pot

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small yellow onion diced
  • 3-4 garlic cloves minced
  • 14 oz tomato sauce
  • 1 cup marinara sauce
  • 2 tbsp tomato paste
  • 2 cups beef broth or more if desired
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp oregano
  • 2 cups lasagna noodle broken up (use no boil noodles for faster cooking)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • cup parmesan shredded
  • ¼ cup Italian parsley chopped
  • ¼ cup fresh basil for garnish

Instructions

  • In a large pot or Dutch oven on medium heat, add the onion to the pot & sauté for about 3-5 minutes. Stir in the minced garlic & cook for an additional minute. 
  • In the same pan, add the ground beef and season with a sprinkle of salt and black pepper. Cook until browned and cooked through.
  • Pour in the tomato sauce, marinara, tomato paste and beef broth. Stir to combine. Season with oregano, the rest of the sea salt and black pepper.
  • Bring the soup to a boil, then reduce the heat to low. Break in the lasagna noodles. Cover and simmer until the noodles are cooked through. 10-30 minutes depending on what noodles you choose. If you use the no boil lasagna noodles, it will cook quickly. If you use regular noodles, it still works but will take much longer. Another option is to precook the regular noodles and then add them in here while the soup is simmering.
  • Add the ricotta, mozzarella & stir to combine.
  • Finish with a generous sprinkle of parmesan, fresh parsley and basil. Serve hot & enjoy!

Notes

For Storing: Store in airtight container in the fridge for 3-4 days.
