What you need to make these easy make ahead waffles + substitutions:
- All-purpose flour – I typically bake with all-purpose flour. However, for these waffles, I’ve been loving using einkorn flour. It’s a nutrient dense ancient grain that has more vitamins and nutrients than all-purpose flour. I get our einkorn from Azure Standard, but it’s also available on Thrive Market ($60 free gift & $30 off your first order) as well! Both einkorn or all-purpose flour work just fine and I’ve used both myself. Gluten-free 1:1 all-purpose flour should work as well, but I haven’t personally tested it myself.. Make sure to find one with xantham gum, I love Bob’s Red Mill, but any should do.
- Sugar – Adds a slight sweetness. You can use coconut sugar, granulated sugar, or brown sugar.
- Baking powder – Helps the waffles rise and stay light.
- Sea salt – We use Redmond sea salt, it’s our favorite and we use it in everything! You can use the code daddioskitchen for 15% off. We get the big big bag!
- Eggs – Adds structure and richness. Best if used at room temperature, but will work fine if they aren’t. I haven’t tested a flax egg as an alternative.
- Milk – Keeps the batter smooth and moist. I prefer whole raw milk, but you can easily substitute with any milk.
- Coconut oil or butter– Adds flavor and crispiness. I love using this liquid coconut oil, because it makes it so easy without melting. Code LEX for 20% off on their website. Regular butter and coconut oil work great.
- Vanilla extract – Gives a warm, subtle sweetness. No baked good recipe is complete without vanilla extract in my opinion. It’s key!

Easy Make-Ahead Waffles
Equipment

Ingredients
- 2 eggs
- ¼ cup coconut oil or butter melted & cooled
- 1½-⅔ cups whole milk or milk of choice
- 1 tsp vanilla extract
- 2 cups all purpose flour or einkorn flour (which I prefer)
- 2 tbsp coconut sugar or cane sugar
- 3 tsp baking powder
- ½ tsp sea salt
- 2 scoops collagen optional
Instructions
- Preheat the waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together eggs, melted and cooled coconut oil, 1½ cups milk, and vanilla extract. the flour, sugar, baking powder, and salt.
- Then add in the flour, sugar, baking powder, salt, and collagen if using. Whisk until everything is well combined. Ideally here it's great if you can let the batter sit for 30 minutes to develop the flavor or cover it and store it in the fridge for 12-18 hours. If not, you can still go ahead and make the waffles right away!
- If you choose to let the batter sit (which I recommend), give the batter a good mix before using. You may have to add a few dashes of milk to get a nice pourable consistency.
- Preheat your waffle iron. Lightly grease the waffle iron with oil or butter. Pour batter onto the heated waffle iron (amount depends on your waffle maker but I use about ¼ cup) and cook until golden brown and crisp.
- Enjoy warm with butter, syrup, fresh fruit, or your favorite toppings!

Hi! Would I be able to make these with no sugar?
Hi!! yes you could take out the sugar, decrease or substitute with maple syrup. If you completely remove the sugar they will be bland but definitely doable! Hope this helps! Enjoy!
