It is safe to say this is our favorite delicious quick and easy taco soup! This really is the best taco soup in my opinion! It’s loaded with tons of flavor, meat, beans and corn. We’ve made this soup in the past, but perfected it. It sure is a crowd pleaser and will have everyone asking for the recipe! We hope you enjoy!

What you need to make this quick and easy taco soup + substitutions:
- Ground beef- We typically use ground beef in this recipe to make it classic. You could substitute with ground turkey or ground chicken if you’d like.
- Yellow onion- Onion is ideal in pretty much most of our recipes. The yellow onion adds a sweet flavor when cooking!
- Frozen corn- We love corn in our soups and especially this taco soup. We use frozen corn, because we always have a giant bag in our freezer, but fresh would be great a well.
- Canned diced green chilis- We buy the mild diced green chilis. If you like spicy, you can buy hot, but we like it mild for the kids.
- Fire roasted diced tomatoes- Fire roasted tomatoes are our favorite because they add flavor, thickness and texture. Regular diced tomatoes work too.
- Black beans- We usually cook with black beans and kidney beans and that’s what most people use. Black beans work well for tacos and other similar dishes. You could use a mix of beans as well for this quick and easy taco soup.
- Chicken stock- We have been using our homemade broth but any bone broth or chicken stock would work. Feel free to substitute with chicken and beef broth/stock or vegetable broth. Our favorite store-bought broth is Kettle and Fire (code DADDIOSKITCHEN for 20% off) and is an easy way to give bone broth to your kids.
- Homemade taco seasoning- Our go-to taco seasoning for everything. Tacos, fajitas, enchiladas, etc. It’s super versatile and a great one to keep in your rotation! You can definitely just use a packet as well!

Quick and Easy Taco Soup

We've made this soup in the past, but perfected it. It sure is a crowd pleaser and will have everyone asking for the recipe! We hope you enjoy!

Ingredients
- 1 lb ground beef
- 1 yellow onion diced
- 15 oz fire roasted diced tomatoes
- 15 oz black beans drained
- 4.5 oz diced green chilis
- 1 cup frozen corn
- 4-6 cups chicken bone broth (depending on how much you like!)
Taco Seasoning
- 2 tsp sea salt
- 1½ tsp chili powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp cumin
- ½ tsp black pepper
Instructions
- In a large pot over medium heat, add the chopped onion. Sauté for about 2-3 min until the onion begins to soften.
- Then add in the ground beef and sprinkle with the seasoning mixture. Cook until it’s browned and no longer pink.
- Pour in the diced fire roasted tomatoes, diced green chilis, and broth. Stir to combine.
- Then, stir in the black beans and corn. Mix everything together. Season with sea salt for taste if necessary.
- Bring the mixture to a boil, then reduce the heat too low. Let it simmer for 15-20 minutes, allowing all the flavors to meld together.
- Ladle your soup into bowls & garnish with your favorite toppings. We recommend queso fresco or shredded cheddar, a dollop of sour cream or greek yogurt, a sprinkle of cilantro, diced avocado, and a few tortilla chips for that extra crunch. Serve warm and enjoy!
Notes
For Storing- Store in an airtight container in the fridge for 3-4 days.
