Chicken Sausage- We love cooking with chicken sausage and always prefer the brand Aidell’s because it’s one of those items our boys never turn down! Any chicken sausage would work for this recipe just be careful that any fillings/flavoring can alter the final taste of the skillet.
Yellow onion- Yellow onions are a kitchen essential and add so much flavor to meals. We prefer yellow onions because they add sweetness when cooked down but a white onion would work as well.
Orzo- We used orzo pasta because it has a versatile texture which makes it great for many hot and cold dishes.

Equipment
- 12in cast iron skillet
Ingredients
- 2 tbsp avocado oil or butter
- 4-5 chicken sausages sliced
- ½ yellow onion diced
- 1¼ cup orzo
- 2 cups chicken broth
- ¼ cup heavy cream
- 2½ cups fresh spinach
- ⅓ cup parmesan cheese shredded
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp garlic powder
- fresh thyme optional
Instructions
- Heat a large skillet and add avocado oil. Then add yellow onion and cook for 1-2 minutes. Next, add sliced sausage & cook together for 4-5 minutes.
- Then add in the orzo and toast for 2-3 minutes.
- Pour in the chicken broth and seasonings. Bring to a boil and then add the heavy cream. Reduce heat to simmer, cover and cook for 10-12 minutes.
- Stir occasionally and add parmesan cheese and fresh spinach. Let melt & wilt down and then serve hot. Enjoy!
