- Pancake mix– I’ve used both my homemade pancake mix and Kodiak cakes mix for these pancake mix donuts. Both work great. Other mixes should work fine here, but I haven’t tested them myself.
- Milk– Keeps the batter smooth and moist. I prefer whole raw milk, but you can easily substitute with any milk.
- Eggs– Adds structure and richness. Best if used at room temperature, but will work fine if they aren’t. I haven’t tested a flax egg as an alternative.
- Maple Syrup– Maple syrup is a natural sweetener, adding rich caramel-like flavor to pancakes, waffles, and baked goods. You can also substitute with honey or cane sugar.

Best Pancake Mix Donuts
Ingredients
- 2 cups pancake mix Kodiak Cakes or my homemade mix (below)
- 1 cup whole milk or milk of choice
- 2 eggs
- ¼ cup maple syrup
- ¼ tsp sea salt
Toppings: (whatever you like)
- sprinkles
- mini chocolate chips
- blueberries fresh or frozen
Instructions
- Preheat your oven to 375F degrees.
- Mix all the ingredients together until combined.
- Spray a donut pan with avocado oil spray or butter. Pour in the mixture. I like to pour the mixture into a ziploc bag, and then cut the bottom corner to make it easy to pour the mix out.
- Pour the mixture into the donut pan.
- Top with sprinkles and chocolate chips or whatever toppings you prefer!
- Bake for 12-15 min until cooked through! Mine made 12 pancake donuts.





I know I can figure this out on my own, but I’m wondering if anyone has done the nutritional analysis for these : ) I use Kodiak Cakes pancake mix bc of the higher protein content, so I’m interested in grams of protein per serving especially. I’m also wondering if I can use egg whites instead of whole egg to save on calories while upping the protein : )
