Blueberry french toast bake might be a new obsession!
Ingredients:
-8 slices cinnamon raisin bread (we use Angelic Bakehouse bread)
-4 eggs
-1 cup milk (I used coconut)
-1 tsp vanilla
-1-2 tbsp maple syrup
-1 tsp cinnamon
-1/4- 1/2 cup blueberries
Directions:
Slice the bread into cubes. Whisk together the eggs, milk, vanilla, maple syrup, & cinnamon in a bowl. Grease the baking dish with coconut oil or butter & fill with bread cubes. Pour over the egg mixture, sprinkle on the blueberries, and let it soak for 30 min or overnight in the fridge. Bake at 350 degrees for 30-40 min (mine took around 32!)! Slice & enjoy and save leftovers in the fridge for up to 5 days! Also freezes great!
