Fall Harvest Salad with Homemade Balsamic Vinaigrette

I could probably eat this salad every single day! There’s something about roasted root vegetables that are so good with salty, vinegar. I just love it so much. As far as the dressing, why don’t I make homemade dressing more often? I forget how easy (& cheap it is) and there are endless possibilities! SO GOOD!

For the Salad:

-Romaine (mixed greens or arugula would be great too

-Grilled chicken (chicken seasoned with olive oil, garlic powder, oregano, dried parsley, sea salt & pepper)

-Roasted beets, carrots, and sweet potatoes (roasted at 350 degrees for 45 minutes with olive oil, sea salt, and pepper

-Feta

-Homemade balsamic vinaigrette (recipe below)

For the dressing:

-3/4 cup balsamic vinegar

-1/2 olive oil

-1.5 tbsp dijon mustard

-1 tbsp raw honey

-1/2 tsp sea salt

-1/4 tsp pepper

Directions:

Mix all the ingredients in an mason jar and shake, shake, shake until everything is incorporated. If you like it with less vinegar, just add more olive oil! ENJOY!
