I absolutely love larabars and always have. T actually loves them too! Recently, he’s been eating all of my bars, so I figured it’d be easier (& cheaper) to make some of our own! Only 4 ingredients but that includes sea salt so literally they are so easy. Thomas doesn’t even like dates and he said they were the best energy balls I had made. Then I told him they had dates and he freaked out. He’s still been eating them though, so he’s possibly converted! Either way, easiest and most delicious snack to have on hand!
-2 cups cashews (you can use any nut)
-1 cup medjool dates, pitted
-1 tsp vanilla extract
-1/8 tsp sea salt
In a food processor, blend all the ingredients together for a few minutes until the nuts are finely chopped and everything is incorporated. If your dates feel dry, you can soak them in hot water for about 30 sec! Once everything is mixed together well, roll the batter into balls, press it into bars, or make it into little hearts like I did! The shape is up to you! Enjoy!
