Honey Garlic Chicken with Rice & Broccoli

This honey garlic chicken with rice and broccoli is a no fuss meal for the whole family. The chicken is so tasty and prepared in the crockpot which makes it easy when you want to get other things done as well. We steamed the broccoli and paired everything together with Success Boil-In-Bag Brown Rice. Rice can be tricky for so many people but with Success Rice it takes all the guess work out and is the perfect addition to any dinner. Plus it’s a nice nutritious side to have for the kids too. We have 3 extra mouths to feed and we can relate to working, juggling kids and feeding. Hopefully this meal makes it to your dinner table too!

What you need to make it + substitutions:

  • Chicken thighs- We used chicken thighs for this recipe and they were fabulous. A fun change up to the usual chicken dish. However, chicken breasts would work fine as well. You’d just have to adjust the cook time. We chose bone-in and skin on chicken thighs because of the extra benefits of flavor and nutrition. The bones are loaded with nutrients plus keeping them in while cooking helps the flavor to spread into the chicken!
  • Soy sauce- We love using tamari, coconut aminos, or just regular soy sauce. Use whatever you prefer.
  • Honey- Raw local honey is our go-to when we can find it. We love to support local. Any honey works here.
  • Sriracha- We added a dash of sriracha for a little bit of spice, but feel free to omit it if you’d like.
  • Fresh garlic- Fresh garlic just gives a nice flavor and touch to this honey garlic chicken with rice & broccoli. You can also use 1/2 tsp powdered garlic if you prefer.
  • Brown rice- We used Success Boil-In-Bag Brown Rice for our rice. If you’ve never tried it, it’s a must. Perfect rice every time, you literally can’t mess up. All you do is take the bag of rice and boil it in water straight in the bag. It takes 8-10 minutes to cook and is SO easy. It’s fluffy and consistent every time. You can even cook it in broth, coconut milk, or whatever for some added flavor and nutrients.
  • Broccoli- You can choose any vegetable you prefer for the side! We did steamed broccoli with butter and sea salt, because that’s a family favorite. Feel free to do any vegetable you love.

Honey Garlic Chicken with Rice & Broccoli

This honey garlic chicken with rice and broccoli is a no fuss meal for the whole family. Ingredients

For the Chicken:

  • 1 lb chicken thighs or chicken breasts
  • cup soy sauce
  • ¼ cup honey
  • 1 tsp sriracha
  • ½ tsp sea salt
  • ¼ tsp garlic powder
  • ¼ tsp black pepper

For the Rice:

  • 1 packet Success Rice brown rice
  • 1 tsp grass-fed butter
  • ¼ tsp sea salt

For the Broccoli:

  • 1 head broccoli chopped
  • 1 tbsp olive oil
  • ¼ tsp sea salt
  • ¼ tsp black pepper

For Serving:

  • green onions (chopped), for serving

Instructions

  • In your crockpot, add the chicken thighs and the rest of the sauce ingredients.
  • Turn your crockpot on low and let it cook for 4-5 hours. Or you can do high for 2-3 hours. I prefer low for a lower and slower cook. You want the internal temperature to reach 165F degrees.
  • Once it’s cooked, use two forks to shred your chicken.
  • Meanwhile, prepare your Success Rice. Pour about 4 cups of water into a medium pot and submerge 1 bag of Success Rice (use 6 cups of water to cook 2 bags of rice). Place the lid on the pot and bring water to a boil and then boil uncovered for 10 minutes. Remove the bag from the water with a fork and let it drain. Then pour it into a bowl, add butter and sea salt. Mix together!
  • Next, steam your broccoli or whatever vegetable you prefer. We love to steam ours and then add in olive oil and sea salt.
  • To assemble, add rice, broccoli, and chicken into your bowl. Top with green onions and enjoy!
